Is there really a better chocolate dessert than a brownie?  I’d have to go with a resounding “NO!”  Whether they are a plain old traditional chewy brownie, frosted, stuffed with filling, made into bite sizes morsels or bark or topped ala mode – when it comes to brownies I am ALL IN.  

Today I have gathered for you, all in one place, a collection of the most epic brownie recipes around.  This is your one stop place for all things brownie!

 

The timing for this is perfect, too, because this week I am part of a bloggers group called #Choctoberfest – and we are about to flood the internet with all things chocolate.  Doesn’t that sound like a fantastic way to start a Monday??

What is Choctoberfest?

#Choctoberfest is an annual recipe-sharing event. As I mentioned, I’m joining other food bloggers from around the world to create delicious chocolate recipes. This year, over 70 bloggers are joining together for a week full of chocolate cakes, pies, cookies, puddings, tarts, candies, and more. Let’s Talk Chocolate for brownie recipes

So before we get to the recipes, let’s start with the most important part of all. The CHOCOLATE! No matter what way you go with the brownie the road always leads back to it. The three most commonly used chocolates available in all stores are Hershey, Nestle, and Ghirardelli. 

All of them are good for brownies, and I have used all of them one time or another. However, knowing a bit about them might help you make a more informed choice in your brownie recipes.

Whether you go dark, semi-sweet, or milk chocolate also makes a difference. For baking brownies, I recommend the dark or semi-sweet. Save the milk chocolate morsels for toppings. 

Hershey, Nestle, and Ghirardelli chocolates for brownie recipes

The big three all offer chocolate for baking and you will find them on the baking aisle not the candy lane. For brownie recipes, Hershey I find has hints of coconut. Whereas Ghirardelli possesses a bit of a raisin essence. Finally, Nestle offers just a bit of hazelnut in their rich chocolate.

If you are planning on going in any of those directions with your brownies, then take advantage of those chocolates accordingly. They will help bring out that respective quality in your brownie.

Brownie Recipe Tips

To get the perfect brownies, take advantage of these simple preparation tips. 

First, never over-beat the eggs and batter. You are making brownies, not cake! When you beat the eggs and batter too much you end up with something closer to cake than brownie. 

Folks that live at high elevations above sea level should also include an extra egg or two in the recipe. The additional moisture is necessary to avoid your brownies coming out like cookies.

Baking tips for brownie recipes

Bake your brownies on a single rack in the middle of the oven. If you have two pans, then don’t stack them on separate levels. If you do, then the steam from the lower rack prevents the top rack from cooking evenly with the lower. 

Make sure to fluff up your dry ingredients first with a sifter if possible. The finer the dry ingredients, the better the binding of the wet ones which results in a better textured brownie.

Give your brownie pan a tap midway through cooking them. You are making brownies, not soufflé. So the tap helps take the air out and give you a better dense brownie texture.

Also, cool them quickly on ice after you pull them from the oven. Just use a separate bake pan with some ice cubes on it and set the hot brownies on top. 

This helps the brownies have an even texture, instead of a cookie bottom with a brownie top.

Some of my favorite ways to eat them aren’t.  Brownie bark or as some call it, brownie brittle, is one of my favorites! Crispy brownie treats, most times with things like nuts or toffee inside.  Secret revealed? It’s one of my favorite guilty pleasure pairings to a glass of red wine.  

The same goes with brownie bites.  Perfectly poppable, and so delicious!

Chocolate Ganache Brownies

Making brownies for the most part is simple, and doesn’t require a lot of fancy equipment.  In most cases, you don’t even need a mixer. (unless you are trying to achieve that cakey texture we chatted about earlier.) A good batter bowl, wooden spoons or spatulas, measuring cups and spoons will get you well on your way. 

However, when the baking dishes come into play, you have a few decisions.  Depending on the thickness of your brownies, you could need a smaller pan vs. a larger one.  Or, if you love the edges like I do, and “All Edges Pan” is where it’s at!

  1. Is there anything better than a brownie? There is when you find all kinds of delicious varieties to make them like you shared. I like how you can take a standard brownie and make it into something really special with just a few tweaks.

  7. I love all the stuff in the prize package but honestly I would share or better yet just give to my mom. She was very ill and in hospital and rehab for about six weeks with severe pneumonia, sepsis, and blood clots in both lungs. I was there two days prior to her coming home to make sure the house was set. I stayed with her a month to help her out with cleaning and cooking, help to wash her hair etc. She’s still on oxygen 24/7 but is doing much better. I never would have left and went home if I didn’t feel she wasn’t well enough to be by herself. Plus her occupational and physical therapist and nurse that came to house every week also assured me that she was doing well and getting better. Sorry for all that, aside from what I said my mom and I are huge choco fans! Whether it is brownies, cookies, cakes, pies…you name it! The recipes you show here are so scrumptious looking! Im definitely going to make some next time I go and see my mom. Im sure she’ll love it as much as I know I will!
