Every year for the Super Bowl we go to my Brother and Sister In Law’s house to watch the game. This year she decided to have a
“Souper-Salad Bowl” theme.
I brought one of my family’s favorite soups, Copy Cat Olive Garden Zuppa Toscana, a new dip I tried, called Hot Reuben Dip, (coming soon) and this BLT Pasta Salad. The bowl was almost empty, so I am taking that as a plus! 😉
It was easy to throw together, especially on a Sunday morning, I was already making breakfast, so I made extra bacon. I have had lots of BLT salads, and I think the thing I liked about this one was that it was a pasta salad, but also had crisp romaine lettuce in it, too. I liked the freshness that it gave.
My kiddos love pasta salad, and their all time favorite is this one, that hosts two crazy key ingredients:
Go check it out, and see for yourself what they are. It’s crazy, but honestly, it wouldn’t be the same without them!
I enjoyed this salad a lot, and will for sure be making it again!
- 12 ounce package of Rotini Pasta
- 2/3 cup bottled ranch dressing
- 1/2 cup bottled Italian dressing
- 1 pound bacon, fried until crispy and then crumbled
- 2 cups sliced grape tomatoes
- 10 leaves Romaine lettuce, washed, dried and chopped
- Tops of 4 green onions, sliced
- Salt & Pepper to taste
Fry bacon, remove excess grease by laying on a paper towel, crumble.
Prepare Pasta, drain and rinse in cold water.
Whisk two dressings together.
Toss Pasta with dressings, fold in remaining ingredients, , serve immediately or chill until needed.
