My kids (and us, too!) LOVE Taco Tuesday! We really just plain love Mexican food in general. Two weeks ago on Tuesday, we had tacos, this past Tuesday I mixed it up and tried out this Taco Meatloaf.
It was bizarre how it had all of the flavors of a taco, but yet cutting into a meatloaf.
It was super-duper easy to make, and you could totally do it ahead and bake it later on or the next day even. Served up with all of the fixings for tacos, lettuce, tomatoes, cheese, sour cream, black olives and avocado (if you have it, we didn’t — **insert sad face here**)
So, next time Taco Tuesday rolls around (like tomorrow??) How about mixing things up in the kitchen and making some MEXICAN MEATLOAF!! Be sure and let me know what you thought if you try it!! Love to hear your comments and feedback.
Taco Meatloaf
This beef meatloaf tastes just like a taco --- especially when served up with all of the taco toppings!
Ingredients
- 2 pounds lean ground beef
- 1 - 1 ounce package of taco seasoning mix
- 2 eggs
- 1/2 sour cream (+ more for serving)
- 1 cup crushed tortilla chips
- Salt & Pepper, to taste
- 2/3 cup Mexican Cheese (+ more for serving)
Instructions
Preheat oven to 350 degrees.
Spray loaf pan with non-stick spray.
Combine all ingredients (except cheese) with hands and form into a loaf. Place in pan.
Cover with foil.
Bake 1 hour and 15 minutes. Remove Foil, top with cheese. Bake 5 minutes more.
Serve with taco toppings like lettuce, cheese, tomatoes, avocado, black olives and sour cream.
