Easy Cheesy Potatoes with Ore Ida Hash Browns recipe is our family’s go-to for holidays and pot lucks. Originally my Mom’s recipe, this is our favorite version of her delicious casserole. It’s my husband’s absolute favorite part about her Christmas meal. He gets so excited anytime it’s on the menu. Leftovers are rarely a thing with this popular dish!

Commonly known as Funeral Potatoes, it is often considered to be the ultimate comfort dish. This cheesy, au gratin potato dish has become synonymous with the Church of Latter Day Saints. It gets the “Funeral Potatoes” name from being a crowd-pleasing casserole served as a side dish at after-funeral luncheons and receptions.

Hash Brown Potatoes In A Casserole Dish

WHAT IS THE DIFFERENCE BETWEEN HASH BROWNS AND SHREDDED POTATOES?

You can use fresh potatoes instead of frozen hash browns if you would like. You’ll need to shred or dice the potatoes to be like hash browns, then put the shreds or cubes in a bowl of cold water. Then you’ll stir, drain, add more water and repeat a few times to remove the starch from the potatoes.
 
Frozen hash browns eliminate all of that effort, as they come pre-peeled, shredded, and frozen for convenience. They also last an extremely long time in the freezer and require no extra prep.
 
In order to prevent your casserole from being soggy, drain thawed frozen hash browns of any excess moisture. Freezing the casserole before or after is an easy way to prep the meal before the day that it will be served and will not make it soggy.

  • Hash Brown Potatoes: Can use either diced or shredded hash browns for this casserole.
  • Salt: For added flavor.
  • Butter: Gives a rich flavor to the dish.
  • Onion: Commonly used in hash brown recipes, this compliments the potato flavor perfectly.
  • Black Pepper: Adds depth and spice.
  • Parsley Flakes: Adds balance to savory dishes.
  • Cream of Chicken Soup: Gives the casserole a creamy texture.
  • Sour Cream: Pairs well with the cream of chicken soup to give a great texture.
  • Shredded Cheddar Cheese: Pairs perfectly and gives a lovely cheesy taste.
  • Corn Flake Crumbs: Substitute Ritz crackers if preferred.
Place thawed hash browns in a large bowl.

HOW TO MAKE CHEESY POTATOES RECIPE

PREHEAT

Preheat the oven to 350 degrees and spray a 9×13 baking dish with non-stick cooking spray.

THAW

Place thawed hash browns in a large bowl.

Combined soup, sour cream, 1/4 cup of melted butter, 1 1/2 cups cheese, onion pepper and parsley.

MIX

In a separate bowl combine soup, sour cream, 1/4 cup of melted butter, 1 1/2 cups cheese, onion pepper, and parsley. Mix until smooth. Pour over hash browns and stir to combine.

Pour into prepared baking dish.

POUR

Begin pouring into the prepared baking dish then combine cornflake crumbs and 1/4 cup of remaining melted butter. Sprinkle cornflake crumbs and remaining cheese over the top of the hash brown mixture.

Ready To Bake Cheesy Potatoes

BAKE

Finish by baking for 50-60 minutes uncovered.

  • 2 pounds frozen hash brown potatoes thawed
  • 1 teaspoon salt
  • 1 stick 1/2 cup butter, melted / divided
  • 2 Tablespoons dried minced onion
  • 1/2 teaspoon black pepper
  • 1 teaspoon parsley flakes
  • 1 (10 ounce) can cream of chicken soup
  • 2 cups sour cream
  • 2 cups shredded cheddar cheese reserve 1/2 cup for topping
  • 2 cups corn flakes crumbled, or can substitute Ritz crackers

Instructions

  • Preheat oven to 350 degrees and spray a 9x13 baking dish with non-stick cooking spray.

  • Pour into prepared baking dish, Combine corn flake crumbs and 1/4 cup remaining melted butter. Sprinkle corn flake crumbs and remaining cheese over the top of the hash brown mixture.
  • Bake 50-60 minutes uncovered.

  1. I love this recipe. Instead of corn flakes for the top u can use Rice Krispies. Take the rice krispies and put them in melted butter to brown them. delicious. My children and grandchildren loved them this way.
