Reuben Breakfast Casserole with Crescent Rolls

All of the things you adore about a Reuben sandwich, tucked inside a warm and comforting breakfast casserole. Crescent roll dough crust, corned beef, Thousand Island dressing, melty Swiss cheese, and eggs. Why wait until lunch to enjoy those delicious Reuben flavors?

 

Reuben Breakfast Casserole

Who says you need to wait until lunch or dinner to get those Reuben flavors that you crave? This Reuben Breakfast Casserole, made with crescent rolls, is the perfect brunch or breakfast way to give your tummy the Reuben food it wants. But just saying that this Reuben Crescent Bake recipe is just for breakfast isn’t fair either. 

In fact, we enjoy this for dinner quite often. It’s just fine all on its own, or with a nice side salad.

National Reuben Month

March is the perfect time to try a Reuben Egg Casserole, it’s National Reuben Month AND you might just find yourself with a little leftover corned beef after you prepare that traditional corned beef and cabbage meal. If that happens, I have you covered with all sorts of ways to use it. Actually, why don’t you just pick up some extra, you might need it. 

That very Reuben Sandwich you see pictured above was just featured in Nebraska Life Magazine in their March/April 2021 issue. I was so tickled to see one of my most favorite recipes in print!

During my 6 year partnership with Frank’s Kraut, I have shared oodles of recipes using sauerkraut of course, but so many of them have been fun twists on the Reuben Sandwich.  A long time ago, I started calling it “Reubenizing” recipes, and it just stuck. 

 

 

How To Reuben-ize Anything

National Reuben Sandwich Day

So National Reuben Month is in March, but here in Omaha, we celebrate National Reuben Day also. National Reuben Day is March 14th of every year. There are all sorts of bars and restaurants here that celebrate this Nebraska original. But you don’t need to live here to celebrate! Make up any of these Reuben recipes and join in the fun!

 

Ingredients in this Reuben Brunch Bake

  • Pillsbury Crescent Rolls (if you can grab the ones that are a whole sheet grab those)
  • corned beef
  • Frank’s Kraut
  • Thousand Island dressing
  • Swiss cheese
  • caraway seeds
  • eggs

 

How to make Reuben Egg Casserole 

Unlike strata or those overnight breakfast casserole recipes, this Reuben casserole recipe doesn’t need time in the fridge, no waiting 8 hours — just layer and bake! The whole thing comes to the table in less than an hour.

 

  • Preheat oven to 350 degrees. Spray a 9×13 baking dish with non-stick cooking spray, set aside.
  • Spread the crescent roll dough into the bottom of the baking dish.
  • Spread the Thousand Island dressing over the top of the dough.
  • Top with corned beef.

 

  • Add caraway and pepper to the eggs and beat well.

 

  • Top corned beef with drained sauerkraut, then with the beaten eggs.
  • Sprinkle with cheese.
  • Bake for 30 minutes. Let rest for 10 minutes before cutting. Top with fresh parsley if desired.

 

Store leftovers covered in the fridge for up to 3 days.

Ingredients

  • 1 package Pillsbury crescent rolls sheets
  • 2 Tablespoons Thousand Island dressing
  • 2 cups corned beef shredded or diced small
  • 2/3 cup Frank's Kraut drained (rinse if desired)
  • 6 eggs beaten
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon caraway seeds
  • 1 7 ounce package Swiss cheese, shredded (about 2 cups)
  • fresh parsley for garnish if desired

Instructions

  • Preheat oven to 350 degrees. Spray a 9x13 baking dish with non-stick cooking spray, set aside.

    Made this for a St. Patty’s Day brunch and it was soooo good! I used Russian dressing instead of thousand island, and put a little extra on top because I love sauces!!
