Breakfast Burritos

It’s no secret how much I love Mexican food. I could eat it every day and am a firm believer that tacos should be a food group. Chips and salsa are an addiction for me – I cannot say no. Sorry not sorry. 

So, beginning my day with a Breakfast Burrito with Sausage and veggies with a side of salsa? I say that makes for a great start to the day, wouldn’t you? Of course, these burritos are also a great lunch option and give you something to look forward to. 

 

Ingredients in Breakfast Burritos

As I mentioned, this recipe is totally customizable. But here is my favorite way to enjoy them.

  • ground breakfast sausage
  • onion
  • red pepper flakes
  • dried cilantro
  • minced garlic
  • colored bell peppers
  • Salt & Pepper
  • eggs
  • shredded cheddar cheese
  • flour tortillas

 

How to Make Breakfast Burritos

 

Begin by preheating the oven to 425 degrees. In a skillet crumble and brown breakfast sausage with onion, red pepper flakes, garlic, and cilantro. When the meat is about halfway cooked add in chopped bell pepper, and continue cooking until the meat is cooked through.

 

Next, beat eggs together with salt and pepper.

 

Remove the meat mixture from the pan, add the eggs in and scramble them. Add meat mixture back in and mix together with scrambled eggs.

 

To assemble the burritos, add a scoop of sausage egg mixture to the center of the tortilla. (about 2/3 cup or so) Sprinkle with shredded cheese.

 

Fold the sides in. 

 

Next, fold the bottom of the tortilla over the egg mixture and roll up.

 

Lay the burritos seam side down on a cookie sheet. Bake for 10 minutes, serve hot with salsa.

Freezer Friendly Make Ahead Breakfast Burritos

While you make these burritos, think about doubling the batch to place some in the freezer. Take them out one at a time, or bake up enough for the whole family for a weekend breakfast or lunch everyone will enjoy. 

How to Freeze Breakfast Burritos: Once the burritos are baked, cool them completely, then wrap them in foil. Place the foil-wrapped burritos in a ziplock bag and place in the freezer for up to 3 months. 

How to Re-Heat Frozen Burritos: To reheat from frozen, place foil-wrapped burritos on a cookie sheet and bake for 1 hour at 425 degrees F. 

 

How to refrigerate and re-heat breakfast burritos

After you bake the burritos, you can store them in the refrigerator in an airtight container. Consume them within 3 days. To reheat them from the fridge, just place them in the oven for 10 minutes and bake for 10 minutes, or until the filling is hot.

The air fryer also works great for warming them back up! All air fryers differ, mine warmed them back up in about half the time as the oven, at the same temperature. 

 

Breakfast Burritos Ideas

As long as you use the same amounts of ingredients, you can switch up the flavor of these very easily. 

  • Use chorizo instead of breakfast sausage to add even more Mexican flair. Spice up ground chicken or turkey in place of the pork sausage.
  • Spice them up by including some chopped Jalapeño with the bell peppers.
  • Make them vegetarian by omitting the sausage and ramping up the veggies. Chopped mushrooms, broccoli, spinach, pinto or black beans, potatoes, or tomatoes would all be great alternatives to meat.
  • Make them vegan by using vegan sausage, eggs, and cheese.

Notes

To freeze: Cool burritos after baking, wrap in foil and then place into airtight bags. Freeze for up to 3 months.
To reheat frozen burritos, place foil wrapped burrito on a cookie sheet, bake for 1 hour in a 425 degree oven.
If storing burritos in the fridge, eat within 3 days.
