Strawberry Bread with Strawberry Glaze

Strawberry season is one of the best and most favorite of all the seasons, if only for the delightful recipes made with fresh strawberries. If you have too many ripe strawberries on your hands then you’ve come to the right place! Ideal for the spring and summer months, my Glazed Strawberry Bread is the ultimate sweet brunch snack or light dessert!

At less than 200 calories per serving, fruit bread is an excellent choice for a lovely tea time snack. Top your strawberry bread with cream cheese or whipped cream for an extra burst of sweet flavor.

WHAT IS A QUICK BREAD?

If you have ever had banana bread before then you know how unbelievably tasty quick bread is. Quick breads are bread type products that are leavened with baking powder and/or baking soda instead of yeast. 

 

There are 3 types of quick breads: fruit bread, cornbread and soda bread. My strawberry bread recipe is of the fruit bread variety. Banana bread is the most common type of these sweet bread types but using fresh berries such as cherries, blueberries or raspberries are also tasty options! For an added crunch, I like to add walnuts or pecans on occasion.

 

If you do prefer to use something other than a 9×5″ loaf pan, you can absolutely make this superb dessert in a muffin pan!

INGREDIENTS FOR STRAWBERRY BREAD

This recipe uses a handful of simple ingredients that you may already have in the refrigerator or pantry! To see the full measurements, scroll down to the recipe card.

FOR THE BREAD

  • Fresh Strawberries: Use any type of fresh berries such as blueberries, raspberries or even cherries.
  • All Purpose Flour: This powerful ingredient provides the structure for baked goods.
  • Butter: Best at room temperature. Provides a higher rise, a crisper crust, and a longer shelf life to the recipe.
  • Sugar: Enhances bread flavor and helps retain moisture in the bread.
  • Eggs: Makes the bread soft and fluffy.
  • Vanilla Extract: Adds a great sweet taste to the bread while also enhancing the other flavors.
  • Baking Powder: Essential to increasing the volume in the fruit bread.
  • Salt: Helps the bread maintain its structure once it is formed.
  • Milk: Adds creamy texture and taste.

FOR THE STRAWBERRY GLAZE

  • Powdered Sugar: Used to create a base for the glazed topping.
  • Vanilla: Enhances the sweet flavors.
  • Milk: Adds the moisture to the glaze.
  • Fresh Strawberries: Gives the sweet, fruity strawberry flavor.

Strawberry Bread Loaf with Glaze

HOW DO YOU MAKE STRAWBERRY LOAF?

My recipe for strawberry bread with glaze is so incredibly easy to prepare! To see even more detailed steps, please scroll down to the recipe card.

 

PREP

Preheat the oven to 350 degrees. Grease or spray a 9×5″ loaf pan. Set aside.

COAT

In a small bowl, coat strawberries with 2 Tablespoons of flour. Set aside.

CREAM

In the bowl of a stand mixer, cream butter and sugar together for about 2 minutes, until light and fluffy. Scrape the sides of the bowl, add in the eggs and vanilla and mix until evenly combined.

MIX

Combine flour with baking powder and salt. Add to the butter mixture a little at a time, alternating with the milk. Mix until smooth.

FOLD

Fold in the flour-coated diced strawberries with a rubber spatula and pour the bread batter into the prepared loaf pan.

BAKE

Bake for 45-50 minutes, until a toothpick in the center, comes out clean.

COOL

Remove from the oven and cool in the loaf pan for 10 minutes before removing and transferring to a cooling rack to cool the rest of the way.

POUR

Beat the powdered sugar, vanilla, milk, and strawberries together until the glaze is formed. Pour over the top of the bread. Save a little to serve with the bread if you like.

STORE

Store in an airtight container for 2 days.
