Chocolate Covered Strawberry Donuts

Baked Chocolate Covered Strawberry Donuts.  I mean, do I have your attention now?  I don’t know about you, but I have never met a chocolate-covered strawberry I didn’t like. Whenever I make them, I can’t keep my kids away from them long enough to fill the plate up for whatever function I am taking them to.

Chocolate Covered Donut

I imagined those favorite little chocolate-covered berries into these gorgeous donuts.   It all started with one of my favorite cakes in the whole world!  This Strawberry Cake.  I got the recipe from my friend, Candi, who blogs over at The Devilish Dish.  Her Grandmother Mary made this cake every Sunday for Sunday supper at her house when Candi was growing up.   I made it a couple of years ago for Easter, and I have made it countless times since then.

It’s such a beautiful cake, and it’s seriously delicious.  The cake starts with a box mix, you add in frozen strawberries and strawberry Jell-O.  It’s frosted with strawberry frosting made also with frozen strawberries. It packs some serious strawberry punch and looks so pretty dressed up for Valentine’s Day.

Ingredients for Chocolate Covered Strawberry Donuts

For complete ingredients and instructions scroll to the bottom of this post for the full printable recipe.

For the donuts:

  • White cake mix – You can use any white cake mix or a vanilla-flavored cake mix.

  • Eggs – Any type of egg is good to make this baked donut recipe.

  • Strawberry Jell-O – Strawberry Jello-O adds strawberry flavor and a pink color.

  • Frozen strawberries – You’ll need to thaw and drain the strawberries.

  • Oil – Use a mild flavored vegetable oil.

  • Water – Tap water is fine.

To make the ganache:

  • Chocolate chips – Delicious dark chocolate chips are my favorite but you can also use semi-sweet.

  • Cream – Heavy cream makes for a rich and creamy ganache.

  • Sprinkles – Pink and red colored sprinkles make these donuts ideal for Valentine’s Day but you can change up the color for any occasion.

  • Rum or strong coffee – These add an extra oomph to these chocolate doughnuts.

How to make Chocolate Covered Strawberry Donuts

You’ll be surprised at how easy it is to make homemade donuts.

First: Preheat oven to 350 degrees. Spray donut baking pans with non-stick cooking spray.

Second: In your mixer, combine all the dry and wet ingredients to make the donuts, except the strawberries, for 2 minutes.

Third: Mix in strawberries.

Fill donut pans just below the edge.

Fourth: Bake for 13 minutes.

Remove to a cooling rack.

Fifth: In a saucepan, mix chocolate chip and cream for your ganache with a wooden spoon. When it’s melty and smooth, remove from heat and whisk in rum or coffee until it’s shiny.

Sixth: Dunk donuts into ganache.

Dust the top of the donuts with sprinkles. Let the chocolate set in a cool place. ENJOY!!

Leftovers will keep in an airtight container for 3-4 days at room temperature. You can also freeze uneaten donuts for up to 3 months. I suggest flash freezing on a cookie sheet so they don’t stick together.

Remember that when it comes to making substitutions in recipes, you don’t need to be afraid to get creative and use ingredients that suit your personal taste and dietary preferences. Make it your own!

  • Instead of frozen strawberries use fresh strawberries. Just wash and remove the hull. Make sure to use real strawberries, not freeze-dried strawberries.

  • If you don’t have vegetable oil on hand use melted coconut oil.

  • Opt for a chocolate glaze with cocoa powder and powdered sugar instead of the chocolate ganache if you don’t have all the ingredients on hand.

  • For even more strawberry flavor, try a fresh strawberry glaze instead of the chocolate ganache.

Tips & Tricks

  • If you don’t have chocolate chips on hand you can use baking chocolate to make the ganache. If it’s unsweetened chocolate add a touch of coconut sugar or brown sugar to sweeten it up.

  • To make gluten-free donuts, use a gluten-free flour blend.

And of course, you need a donut pan!  If you don’t have one yet, I ordered mine on Amazon.  It’s a Wilton brand, and I was so happy with it, that I got a second one.  and I got mini ones, too.  Because a girl can never have too many baking pans, can we?
