A Mug Brownie is a simple way to make a dessert for one that cooks quickly in the microwave and cleans up easily. A warm ooey, gooey chocolate brownie, eggless, with or without nuts, made from scratch, using a hot cocoa packet. Serve it with whipped cream or ice cream and berries for a decadent dessert in an instant!

A brownie in a mug isn’t just any brownie. Yes, it is still a brownie, rich and delicious, with nuts or no nuts. What makes it special is the mug it’s “baked” in, making it no ordinary brownie.

It is the most convenient brownie in the world. The serving size is easy to measure. You have a built-in container to add some whipped cream or ice cream on top if you like, and it cooks so quickly right in your microwave! Dessert for one, any time of the day or night.

An easy brownie in a mug

Like my apple crisp in a mug recipe, the brownie in a mug cooks in a microwave. So you arrive at warm, chocolatey, and delicious, well before any impatience sets in. You barely have time to blink before that sweet tooth becomes part of a big smile. The easiest brownie in a mug ever!

I know that you have so many options when it comes to making brownies! I love making brownies, too,  so of course, I have tons of recipes to work with, but this one is great because it’s only one serving!

 

Dessert for one

With microwave brownies, you can easily make dessert for one or two (hello, date night in!!) people without having to go overboard. No more guilt trips because you made a pan of brownies then ended up eating the whole thing. No more feeling guilty about that diet that just flew out the window. 

Being able to quickly cook it in the microwave in a mug also means it is much easier to clean up afterward, too. So, mug desserts are perfect for creating treats that feel so special… even though they are soooooo easy.

 

How to make a Brownie in a Mug

It really couldn’t be easier. Here are the ingredients you’ll need for your Mug Brownie: butter, milk, hot cocoa packet, flour and chocolate chips. If you’d like you can add some nuts, and serve with whipped cream, ice cream or fresh berries. 

 

Begin by gathering your ingredients, and a 12-ounce microwave-safe mug.

Then, melt butter in the mug. 

Next, stir in hot cocoa mix, flour and milk until combined.

Finally, mix in chocolate chips, and then the nuts if you are using them.

Microwave on high for 1-2 minutes or until a toothpick inserted in the middle comes out clean. Cool slightly.

 

 

Serve with whipped cream or vanilla ice cream, berries, and nuts if desired. 

 

 

Hot cocoa brownie in a mug

Is that a cup of hot cocoa or is that a brownie in a mug? Well, I guess you could say that it is the best of both. My super easy brownie recipe is just as good as any boxed recipe and you can use any sort of chocolate chips to make it per your preference. The packet of hot cocoa mix in the recipe serves a dual purpose.

First, the packet of cocoa will add some chocolate to the recipe, of course. But also, it gives you enough sugar in a pre-measured amount. So it provides convenience as well. 

 

What kind of hot cocoa mix?

Really, whatever you might already have handy in your pantry is just fine. Or, if you are going to pick up some packets of hot cocoa then there are tons of options at the grocery store. From the old classic Swiss Miss to any of the fancier ones like Starbucks or Ghirardelli, you can’t go wrong. 

Some might have a more intensely rich chocolate flavor, but all of them serve the same purpose. Keeping the brownie in a mug recipe ever so simple!

 

No egg brownie mix

My simple brownie recipe is eggless. I know that seems strange if you are used to using pre-mixed brownie box recipes that call for eggs and oil. But my hot cocoa homemade brownie mix doesn’t require eggs. 

I also use butter instead of oil, but if you wanted to make it vegan then you could substitute the butter for a preferred oil, like avocado oil. 

 

Nuts or no nuts for the brownie in a mug recipe

For some folks, it isn’t a brownie unless some nuts are involved. For others, keeping the nuts out is the only way they will consider eating one. I suggest walnuts but you don’t have to use them. Walnuts go nicely, but most any other nut works. 

Just make sure if you use salted nuts then you might want to use a strainer to shake off some of that extra salt. 

 

Types of chocolate chips to use

The type of chocolate chip you use determines just how rich the brownie will be. There are many types to choose from, but the ratio of sugar to cacao sets them apart. Semi-sweet and dark chocolate chips have a higher ratio of cacao than milk chocolate chips. So if you want a deeper chocolatey flavor then those are the best bet. 

However, there are so many kinds of baking chips nowadays you can really expand your brownie horizons with them. White chocolate, peanut butter, butterscotch, caramel, you name it. The sky is the limit and every one of them can be used. Even try mixing them together!

Ingredients

  • 2 Tablespoons salted butter
  • 1 1 ounce hot cocoa packet
  • ¼ cup all-purpose flour
  • ¼ cup milk
