Frosted Animal Cracker Truffles (Circus Animal Cookie Truffles)
Ingredients
- 8 ounces cream cheese room temperature
- 1 ½ cups Nilla wafers
- 1 ½ cups frosted animal cracker cookies
- 4 cups white chocolate chips
- 1 Tablespoon rainbow sprinkles (Nonpareils)
Instructions
- Line a 9×13 inch baking sheet with wax or parchment paper. If you haven’t already, set out your cream cheese and let it soften on the counter for at least 30 minutes.
- Add the Nilla wafers and animal crackers to a food processor or blender. Pulse until the ingredients are finely crushed.
- Add your crushed cookies to a bowl along with the cream cheese. Fold the ingredients together until thoroughly combined. Make sure there are no pockets of cream cheese in the mixture.
- Use your hands to roll the mixture into balls about 1-2 tablespoons in size. Place each truffle ball on the baking sheet and chill in the freezer for 30 minutes.
- After 30 minutes, melt your white chocolate in the microwave until smooth. Dip each truffle ball in the melted chocolate and top with a pinch of sprinkles. Chill your truffles for another 30 minutes in the fridge.
