Frosted Animal Cracker Truffles are a fun, no-bake treat made with frosted circus animal cookies, nilla wafers, and cream cheese, then dipped in white chocolate and topped with sprinkles. These bite-sized truffles are soft, sweet, and perfect for parties, holidays, or anytime you need an easy dessert.
Line a 9x13 inch baking sheet with wax or parchment paper. If you haven’t already, set out your cream cheese and let it soften on the counter for at least 30 minutes.
Add the Nilla wafers and animal crackers to a food processor or blender. Pulse until the ingredients are finely crushed.
Add your crushed cookies to a bowl along with the cream cheese. Fold the ingredients together until thoroughly combined. Make sure there are no pockets of cream cheese in the mixture.
Use your hands to roll the mixture into balls about 1-2 tablespoons in size. Place each truffle ball on the baking sheet and chill in the freezer for 30 minutes.
After 30 minutes, melt your white chocolate in the microwave until smooth. Dip each truffle ball in the melted chocolate and top with a pinch of sprinkles. Chill your truffles for another 30 minutes in the fridge.
