Frosted Animal Cracker Truffles (Circus Animal Cookie Truffles)

Frosted Animal Cracker Truffles are a fun, no-bake treat made with frosted circus animal cookies, nilla wafers, and cream cheese, then dipped in white chocolate and topped with sprinkles. These bite-sized truffles are soft, sweet, and perfect for parties, holidays, or anytime you need an easy dessert.

Ingredients

  • 8 ounces cream cheese room temperature
  • 1 ½ cups Nilla wafers
  • 1 ½ cups frosted animal cracker cookies
  • 4 cups white chocolate chips
  • 1 Tablespoon rainbow sprinkles (Nonpareils)

Instructions

  • Line a 9x13 inch baking sheet with wax or parchment paper. If you haven’t already, set out your cream cheese and let it soften on the counter for at least 30 minutes.
  • Add the Nilla wafers and animal crackers to a food processor or blender. Pulse until the ingredients are finely crushed.
  • Add your crushed cookies to a bowl along with the cream cheese. Fold the ingredients together until thoroughly combined. Make sure there are no pockets of cream cheese in the mixture.
  • Use your hands to roll the mixture into balls about 1-2 tablespoons in size. Place each truffle ball on the baking sheet and chill in the freezer for 30 minutes.
  • After 30 minutes, melt your white chocolate in the microwave until smooth. Dip each truffle ball in the melted chocolate and top with a pinch of sprinkles. Chill your truffles for another 30 minutes in the fridge.
  • Serve and enjoy!

Notes

Store these truffles in an airtight container in the refrigerator for up to one week.
You can enjoy them straight from the fridge for a firmer bite, or let them sit on the counter for a few minutes to soften slightly before serving.
