Slow Cooker Meals in the Summertime

When it’s hot outside, and yikes … has it been HOT outside lately – an easy slow cooker recipe is a lifesaver! Who wants to spend a bunch of time in a hot kitchen, cooking up a heavy meal when it’s sweltering outside?

This crockpot teriyaki chicken recipe is the perfect light meal for summertime (or heck – anytime). A family favorite meal, done in a couple of hours and your slow cooker does pretty much all of the work for you.

For a complete meal, serve it over a bed of rice and open a jar of Paisley Farm Five Bean Salad to serve alongside, and dinner is served!

Busy nights call for simple meal ideas, and what could be easier than twisting the lid off of a jar of yummy bean salad? This salad is delicious, nutritious, and packed with so much flavor!

A well-stocked pantry is always a good idea, but it comes in really handy when you are pinched for time. 

 

INGREDIENTS FOR CROCKPOT CHICKEN TERIYAKI

This recipe uses a handful of simple ingredients that you may already have in the refrigerator or pantry! For the full measurements, scroll down to the recipe card.

  • Boneless Skinless Chicken Breasts: Can sub boneless skinless chicken thighs if you prefer dark meat. They are also a little less expensive than breasts. 
  • Brown Sugar and Honey: Essential sweet ingredients to balance out the salty elements.
  • Low Sodium Soy Sauce: Gives the sauce its wonderful umami flavor. Low sodium is preferred as regular soy sauce may make the dish too salty.
  • Rice Wine Vinegar: Adds acidity with a hint of sweetness. White vinegar or apple cider vinegar be used if preferred.
  • Garlic: Enhances the warm, savory flavors.
  • Ginger Puree: Used for the spicy brightness it brings to the sauce. Freshly grated ginger root can be used if preferred.
  • Pepper: Punches up the other flavors.
  • Cornstarch: When mixed with water becomes a cornstarch slurry. When stirred into the sauce in the crock pot, it thickens it, and then it will stick to the chicken better.
  • Water
  • Scallions and Toasted Sesame Seeds: Used for topping and serving, if desired.

 

HOW TO MAKE CROCK POT CHICKEN TERIYAKI

WHISK

In a small bowl, whisk together brown sugar, honey, soy sauce, vinegar, garlic, ginger and pepper.

PREP

Place the chicken breasts in the bottom of your slow cooker.

POUR

Pour the sauce over the top of the chicken.

COOK

Cover and cook on low for 4-5 hours.

CUT

Remove chicken from crockpot and either cube it or shred it.

TIP: If you cook the chicken on the longer end of the time, it will be perfect for shredded chicken. If you cook it for a shorter period of time, you will be able to cut and cube it with a sharp knife. It’s all personal preference. Just note that the internal temperature of the chicken should reach 165 degrees for food safety.

Return the chicken to the crock.

MIX

Make a cornstarch slurry by whisking together cornstarch and water until it is smooth and there are no lumps.

WARM

Transfer the sauce from the crockpot to a medium-sized saucepan. Warm over medium heat.

STIR

Whisk the cornstarch mixture into the sauce on the stove and stir as it thickens.

Pour the sauce over the chicken and stir to combine.

SERVE

Keep it warm in the crockpot until ready to serve. Serve over rice with a sprinkle of scallions and sesame seeds.

Tip: Next time you are fixing rice for a meal try one of the steamer packets of rice you can grab at the store. They have long grain white rice, (what I used) Basmati, and Jasmine rice, too! Easy meal prep at its finest, my friends!

The main difference between the sauce and marinade is the way in which each is used to flavor the meat. Marinating meat in a Teriyaki marinade is a slow, thorough process, allowing the teriyaki sauce to infuse itself into the chicken, beef, or fish.

Can you overcook chicken in the crock pot? Yes, it is entirely possible to overcook chicken in a slow cooker! If it is cooked too long it could end up dry – not juicy and tender.

Ingredients

    This recipe looks delicious. I have one question: Is it ok to leave the cornstarch out when making the sauce? I’m allergic to corn. Will the honey thicken back up a bit once the sauce cools down? Or, could I add just a sprinkle of Xantham Gum at the end of the cooking process of the sauce?

    1. Hi, Millie! Can you use arrowroot powder? The sauce will not be thick and cling to the chicken without some thickener. Arrowroot powder is a one-to-one ratio. Using the Xantham Gum can result in a slimy/chewy outcome. If you can have certain flours, another idea would be to make a roux with flour and water then whisk that into the sauce. You will need more flour than it calls for cornstarch.
