It’s 5 o’clock and everyone is looking at you like “FEED Me.”  You don’t have a clue what you’re making, because hey, you have your own problems, right?  But you signed on for this mom thing and part of that means keeping them fed. 

You have a pound of ground beef, and you go to the pantry for inspiration.  There sits a package of egg noodles, and next to it, a jar of Paisley Farm Five Bean Salad.  That’s where this Five Bean Ground Beef & Noodle Skillet Casserole was invented, right in my pantry.

Back to my crazy Tuesday night, or was it Thursday night? I don’t remember for sure, as most weeks all seem to run together at this point.   I grabbed a skillet and started to brown my ground beef with a little minced onion and salt and pepper.  I filled a pot with water to bring to a boil for the noodles.

I drained the Paisley Farm Five Bean Salad and added it and a can of diced tomatoes to the ground beef.

Give it a good stir and let it simmer for about 10 minutes.

Then it’s time to stir in the noodles and of course some cheese. What’s a casserole without cheese??

We served it right from the pan.  A hearty ground beef & noodle casserole, full of healthy beans and tomatoes.  It was easy to make, I had dinner on the table in no time, and it was something I could feel good about them eating.

Statistics show that children communicate better with their parents, are more likely to eat healthy food and maintain a healthy weight, and are even less likely to involve themselves in risky behaviors.  

In the days of my grandparents, family meals took an average of one and a half hours, yet today they are done in under 15 minutes.  On average, Americans spend around 50% of their food budget of the week dining out.  Sadly, drive-thrus have replaced the family table.  But when you have easy family meals, like this one, with healthy ingredients and hardly any time to prepare them, you can skip the drive-thru and gather around the table at home.

Ingredients

  • 1 pound lean ground beef
  • 1 Tablespoon dried minced onion
  • 1/2 teaspoon red pepper flakes
  • Salt & Pepper to taste
  • 1 24 ounce jar Paisley Farm Five Bean Salad, drained
  • 1 14.5 ounce can of diced tomatoes (with juice)
  • 1 12 ounce package egg noodles
  • 8 ounces shredded mild cheddar cheese

Instructions

  • Bring a pot of water to boil, prepare noodles al dente.
  • While noodles are cooking, brown hamburger, onion, red pepper flakes, and salt and pepper.
  • When the meat is cooked, add in Five Bean Salad and tomatoes. Stir and cover to simmer for about 10 minutes.
  • Stir in noodles and shredded cheese. Cover to let the cheese melt. Serve from pan.
