I am super excited to share today’s post with all of you! I have been blessed to have worked with Eat Smart Gourmet Vegetable Salad Kits before, and was so happy to, yet again, create another nutritious meal idea for them (and for you)!

They are SO FRESH and make eating smart, so very easy. These chef-inspired salad kits offer sophisticated blends of five or more superfoods and include everything needed for a delicious salad. Perfect for those looking for innovative, convenient and healthy eating options that are easy to integrate into busy lives.
Today I am sharing a great meal idea with you using the new Eat Smart Asian Sesame Vegetable Salad Kit. This salad kit contains six superfoods, and includes savoy, red, and green cabbage, carrots and kale. The powerful blend of vegetables is enhanced by preservative free toppings including cashews, sesame sticks and a delicious sweet sesame dressing. Of course, this salad is scrumptious all on it’s own, but if you want to add some protein to the top, these Sweet Heat Asian Grilled Shrimp pair exquisitely! In fact, I think it’s the perfect way to celebrate National Nutrition Month, don’t you?
A shrimp marinade of orange juice, honey, brown sugar, soy sauce and Sriracha make these shrimp so very tasty! They are the perfect accompaniment to the Eat Smart Asian Sesame Vegetable Salad Kit. Keeping with the quick and easy theme, I used cooked shrimp. If you want to go to the effort of peeling and de-veining them, that would work, too. I even took the tails off, so we could just simply pop them in our hungry mouths! They only marinade for about 10 minutes then off to the grill they go. You could also prepare these quickly in a skillet.
The marinade caramelizes over the shrimp for a flavor that is out of this world. Sweetness with just a little bit of that heat in the end.
Next toss the Eat Smart Asian Sesame Vegetable Salad Kit together. I LOVE all of that crunchy goodness!
Serve with shrimp, and a couple of orange wedges on the side. Who needs to go to a restaurant when a meal at home looks and TASTES as good as this one does!?
