This is the best breakfast casserole I have ever made or eaten, and so easy to prepare and ready in 40 minutes, no overnight required. I have finally found the best breakfast casserole! Do you know how many I have tried over the years that have just been “okay?” Lots.  Like a whole bunch. 

Typically when I make a little something special, I always make one of my quiche recipes.  They always make an appearance at the holidays.  In 2018, I decided that I wanted to do something other than quiche.  I reached out to some of my blogger friends and got many ideas.  But this recipe came from my friend, Brandi, at Aunt Bee’s Recipes.

There’s something comforting about a rich and hearty breakfast casserole. Perfect for those mornings when you really need to fuel up before heading out.  Buttery crescent roll crust topped with soft and fluffy eggs coupled with savory sausage all smothered with melted cheese is the perfect combination of flavors and textures.

Breakfast casseroles are a great way to use up whatever you’ve got in the fridge. Feel free to change things up and throw in leftover cooked vegetables, uneaten meat, and whatever cheese you have on hand. Nothing is carved in stone with this breakfast casserole recipe.

This crescent roll breakfast casserole recipe is ideal any time but I think it would be a huge hit at your next baby shower, holiday brunch, Mother’s Day, on Christmas morning, or even when you have overnight guests.  You can easily prepare the ingredients the night before tossing it together the next morning and baking it. If you have a lot going on, preparing the casserole ingredients in advance is always a good idea. Leftovers are great the next day too.

Pillsbury crescent rolls – These rolls can be found in the dairy aisle of the grocery store. Buy the crescent roll dough sheet if you can find it! 

Breakfast sausage – Ground pork Breakfast sausage is what I use. I typically grab Bob Evans for Jimmy Dean. However,  ground turkey sausage, pork sausage, and mild Italian sausage would also work. 

Your favorite veggies – I used yellow onions, mushrooms, a red bell pepper, and a green bell pepper.

Eggs – Any kind of eggs will work in this crescent roll casserole.

Salt and pepper – Add salt and pepper to taste. 

Shredded cheese – I used Three Cheese Cheddar but any kind of cheese will work; plain cheddar cheese, mozzarella cheese, or any hard cheese. 

Scallions – Scallions or green onions, for garnish, if desired.

How to this make sausage and crescent roll breakfast bake casserole recipe

Follow these easy steps to a delicious breakfast casserole. 

First: Brown the sausage with the onions in a large skillet.

When it’s about half done, add in the mushrooms and peppers. 

Cook until the sausage is golden brown. 

Second: Spray a 9×13 baking dish with non-stick cooking spray. Spread the crescent roll dough out in the bottom of the pan and seal the edges to make 1 large sheet.

Top with cooked sausage mixture.

Third: Beat eggs with salt and pepper and then pour the egg mixture over the top of the meat & veggies.

Fourth: Sprinkle shredded cheese over the top and bake the sausage breakfast casserole at 350 degrees for 30 minutes.

Fifth: Allow to rest for 10 minutes before slicing.

Top with scallions, if desired.

Cool to room temperature and store leftovers in an airtight container for 3 days in the refrigerator or up to 3 months in the freezer.

Why is my breakfast casserole soggy? If you find your casserole is soggy it could be because you didn’t let it bake long enough or there was too much moisture.

How do you fix a dry breakfast casserole? If you find your casserole is dry you can add a little milk to it and make sure to cover it tightly with aluminum foil or plastic wrap.

Remember that when it comes to substituting recipes, you don’t need to be afraid to get creative and use ingredients that suit your taste and dietary preferences. Make it your own!

  • Use different meats; try bacon or ham instead of breakfast sausage. Vegetarian meat alternatives will also work.

  • Switch up the type of cheese.

  • Try a different assortment of vegetables. As long as the measurements are the same, you are good to use whatever you like!

  • Save leftover cooked sausage to use in this easy breakfast casserole recipe. 

  • For a creamier casserole add softened cream cheese to the eggs. 

  • Add a pinch of garlic powder to the eggs for more flavor. 

  • Drizzle with a touch of hot sauce for a pop of spice. 

  • Cut leftovers into portioned squares, wrap them in parchment paper, and place them in an airtight container in the fridge. Reheat in the microwave for a minute or two. Breakfast meal prep solved.
