Cabbage Roll Soup — I took two of my favorite things and made one amazing meal. Even better than how tasty it is? It’s super easy, too. You can prepare this cabbage soup on your stove top in about 45 minutes, or slow cook it on your crock pot all day.

We LOVE cabbage rolls. They are an easy dinner that is good and good for you! We actually had them a couple of weeks ago, and the were so yummy, I bought more cabbage and made this cabbage roll soup! It has all of the same components of cabbage rolls , but all chopped and cooked in a tomato flavored broth.
Traditional Stuffed Cabbage Rolls just like Mom always made. Meatball made of ground beef, rice and Parmesan cheese, wrapped in a cabbage leaf and topped with tomato sauce.
Face it. Cabbage rolls, no matter how delicious they are, are kind of a pain to make. I mean, I still make them, but I typically reserve them for a Sunday meal when I have more time to mess with them.
This Unstuffed Cabbage Roll Skillet is a one pot meal, mimicking those time consuming cabbage rolls, ready to eat in minutes!
I am all about making recipes easier. So, not only have I made Stuffed Cabbage Rolls into a soup — I made them into a super easy skillet meal. Same concept. One pan, ingredients of cabbage rolls chopped and prepared quickly. On the table in minutes instead of hours.
Ingredients in Cabbage Roll Soup:
- lean ground beef
- green cabbage
- onion
- canned tomatoes, tomato paste, tomato juice
- rice
- beef bouillon
- water

Brown ground beef with onion and garlic in your soup pot, or cast iron dutch oven. Drain any excess grease. Add cabbage to the ground beef, cover the pot and wilt the cabbage for about 5 minutes.
Add in the rest of the ingredients, cover and simmer for about 30 minutes. That’s it.
If you want to make this in your crock pot, simply brown your hamburger ahead of time. Add everything to your crock pot and slow cook for about 5 hours, or cook on high for around 2.
Either way, you have a simple, delicious weeknight meal your whole family is sure to enjoy. Plus? The leftovers are awesome! My recipe does make a generous batch of soup, but it’s easily cut in half for smaller families.

Cabbage Roll Soup - + Crock Pot Instructions
Lean ground beef, rice, cabbage and tomatoes. simmered together to make this simple, yet hearty Cabbage Roll Soup. All of the flavors of stuffed cabbage rolls, in a bowl.
Ingredients
- 2 pounds lean ground beef
- 1 head green cabbage, chopped
- 3/4 cup chopped onion
- Salt and Pepper, to taste
- 2 cloves garlic, minced
- 2 (14.5 ounce) cans of diced tomatoes + 3 cans water
- 3 beef bouillon cubes
- 3 Tablespoons Tomato Paste
- 1 1/2 cups tomato juice
- 1/2 Tablespoon Worcestershire sauce
- 3/4 cup instant brown rice, uncooked
Instructions
- In your soup pot, brown ground beef with onion and garlic. Drain any excess fat.
- Add cabbage and combine to wilt for about 5 minutes.
- Add the remainder of the ingredients into the pot. Cover and bring to a boil. Reduce heat and simmer for about 30 minutes.
- Serve hot.
Notes
** To prepare in the crock pot, add browned ground beef and remaining ingredients to your slow cooker, and cook on low for about 5 hours.

Stuffed cabbage is one of my all time favorite foods, my mom bakes the best, obvi! I’ve made it into a casserole before because I cannot roll the cabbage like she does, but this soup looks even better! I love the sauciness!
