Creamy Italian Four Bean Pasta Salad

Using simple ingredients from your pantry; pasta, olives and Paisley Farm Four Bean Salad, added to some fresh cucumbers and onion, mixed with an easy homemade creamy Italian dressing, and you have a quick and delicious picnic pasta salad!
There are lots of times I need to throw together a quick pasta salad. Maybe a last minute invite to a barbecue, an impromptu lunch with the girls, or church will call me requesting one for one of the food committees that I am on. I try to always keep things in my pantry that allow me to make a salad like that in a snap. This is one of those kinds of salads.

Best part, is it’s so easily adaptable. Don’t like olives? Omit them, or try something else. Artichokes are super good in this one, too!
This time I used a tri-colored rotini noodle. Love the extra color it adds, and the rotini noodles are great, because they hold on to that dressing and cheese. The red onion and cucumbers add that crunch, and the bean salad, it just comes perfect to the salad party — right out of the jar!

Creamy Italian Four Bean Pasta Salad
Ingredients
- 1 12 ounce box Tri-Colored Rotini Pasta, cooked al dente
- 1 heaping cup Paisley Farm Four Bean Salad
- 1 2.25 ounce can sliced black olives
- 1/2 cup sliced cucumbers
- 1/4 cup red onion sliced thin
- Grated Parmesan cheese and fresh Italian parsley for serving, if desired
The dressing:
- 1/3 cup mayo
- 2 Tablespoons milk
- 2 heaping teaspoons Italian Salad dressing seasoning
Instructions
- Rinse cooked pasta in cold water. Set aside.
- Prepare dressing, set aside.
- Place salad contents in bowl, give it a toss. Add dressing, mix it up. Top with Parmesan cheese and Italian parsley if desired.
- Chill until ready to serve.
