Ah… summertime and the livin’ is easy. School is out, the sun is out, the the grill is fired up and we are all grinning from ear to ear!

We love hot dogs in our family, so when it comes to grilling, we really enjoy the simplicity of them, adding our favorite toppings and a nice salad on the side.

So, the family is coming, we know we are grilling up some yummy Ball Park Park’s Finest Hot Dogs, now it’s time to pick a side dish. When I was a kid, my Mom always made her macaroni salad for picnics. It was always my favorite.
It’s easy to make and tastes amazing – Even better the next day!
Elbow macaroni, hard boiled eggs and green onions – with a dressing of mayo and mustard. So easy!

- 12 ounce box Macaroni
- 5-6 hard boiled eggs
- 1 cup chopped celery
- 1/4 green onion, sliced
- Salt & Pepper to taste
- 1/8 cup yellow mustard
- 3/4 cup mayonnaise
- fresh chives for garnish (optional)
Cook pasta according to package instructions. Rinse in cold water.
Peel and chop hard boiled eggs.
In a large bowl, combine noodles, celery and green onion. Stir in mayo and mustard.
Salt and pepper to taste.
Top with fresh chives.
Store in refrigerator until ready to eat.
This salad tastes even better the next day, so if time permits, let it refrigerate over night.
