Runza Casserole

If you have ever eaten a Runza sandwich before, you know the deliciousness that is tucked inside those bread pockets. Warm cabbage, onion, and seasoned ground beef mingle so perfectly, you won’t be able to hide the audible “mmm” that escapes your lips.

But here in Nebraska, we know that the original Runza was where the story began, but from them, all sorts of Runza ideas were made. Runzas with cheese, Italian Runzas, and more recently, even Reuben Runzas!

 

Swiss Mushroom Runza Casserole

When I eat at Runza, I waffle between two menu items, the original Runza sandwich, and their Swiss Cheese Mushroom Burger. So, this casserole is what I would like to think is a perfect blend of both of my favorites!

The basic recipe for Runza casserole called for cabbage, onion, ground beef and sometimes people add American or cheddar cheese. I switched it up a little bit and added the mushrooms and Swiss cheese, which, in my opinion, makes this the perfect “best of both worlds” casserole.

What is a Runza?

If you have to ask what a Runza is, then us Nebraskans know you have never visited our fine state.  But you may have heard it called by its Volga German name, the Bierock.

It’s a bread dough pocket, stuffed with cabbage, onion, seasoned ground beef, and sometimes cheese, and baked until golden brown.  They are in a word, delicious!

You can even order these Nebraska Stuffed Beef Sandwiches online and have them shipped to you. Or of course, follow my super simple Runza Sandwich recipe that uses frozen bread dough, and make your own from scratch! (make sure you make some extras to toss in the freezer – you’ll be glad that you did!)

But if you don’t want to take the time to go the traditional route, but you really are craving it, this bierock/Runza bake is a great way to satisfy that desire.  I have seen quite a few recipes for similar casseroles to this one. Where I live every church cookbook has at least 5 options for them, so I am not really sure where the Runza casserole originated?

I got the basic recipe that I mentioned earlier from a guy that my twins work with, and I just adapted mine from there. Some people make this casserole with Bisquick, which is delicious, but making it with crescent roll dough is so much easier.

 

 

 

Ingredients in Swiss Cheese Mushroom Runza Casserole

Nothing fancy goes into this wholesome casserole. Simple ingredients make up this comforting meal. 

  • crescent roll dough – buy the full sheets if you can, makes them even easier to use! 
  • lean ground beef
  • onion
  • cream of mushroom soup
  • canned sliced mushrooms – fresh can be used, you’ll just need to cook them until they are tender
  • Salt and pepper
  • green cabbage
  • mozzarella cheese
  • Swiss cheese – if you don’t shred your own cheese, you are missing out! {See why}

 

How to make Runza Casserole

  • Begin by preheating the oven to 350 degrees and spraying a 9×13 baking dish with non-stick cooking spray.
  • Next, brown ground beef with onion. When the meat is about halfway cooked, season with salt and pepper and add in mushrooms, chop the mushrooms, and cook for a couple of minutes. Add in shredded cabbage, and cover with a lid. Stir and cook for about 5 minutes more. Cabbage will have wilted.
  • Then, stir in cream of mushroom soup.

 

 

  • Next line baking dish with one sheet of crescent dough, top with meat mixture.
  • Sprinkle with both kinds of cheese.
  • Finally, top with the remaining sheet of crescent dough. Pinch together at the edges.
  • Bake for about 25 minutes, or until crust is golden brown and filling is hot and bubbly.
  • Garnish with fresh parsley if desired.

 

Cut into squares and serve hot right from the baking dish at the table.

Ingredients

  • 2 8 ounce packages of crescent roll dough (purchase the full sheets if you can find them)
  • 1.5 pounds lean ground beef
  • ½ cup onion finely chopped
  • 1 can 4 ounce sliced mushrooms, drained
  • Salt and pepper
  • 2 cups green cabbage finely shredded finely (about ½ of a small head)
  • 1 can cream of mushroom soup
  • 4 ounces mozzarella cheese shredded (about 1.5 cups
  • 4 ounces Swiss cheese shredded (about 1.5 cups)

Instructions

  • Preheat oven to 350 degrees. Spray a 9x13 baking dish with non-stick cooking spray.

  6. My mother’s family immigrated from the Volga area to the Scottsbluff area back during the Bolshevik Revolution. They brought the Kraut Bierock recipe with them. We loved them. When Mom and Grandpa decided to make them, it was an all day process as they were made with homemade bread dough. We couldn’t wait until they were coming out of the oven.. They even served “cabbage burgers” at the Bridgeport school cafeteria back in the day! This is an easy way to get the cabbage burgers flavors without so much work.
