We eat chicken multiple times per week, and finding a recipe that is THIS GOOD and only 4 ingredients, is a winning situation!
On Wednesday of this week I shared my review and recipe post from Deep South Dish’s new cookbook. I made Mary’s Skillet Red Beans & Rice and holy moly! was it good! The night before we had the rice, I made this recipe from the cookbook as well. I actually found it under the recipe for Mama’s Grilled and Smothered Chicken (grilled chicken smothered with onions, mushrooms and cheese). I had planned to make this version, but my oldest son was there when I was reading the ingredients, and he is my ONLY child that doesn’t really care for mushrooms – so obviously he chose the recipe without – plus it being barbecued was also a perk for him! I saw the ingredients for this version, and I had all of them (all FOUR! 😉 ) on hand.
You marinate the chicken for a couple of hours in your favorite BBQ sauce, grill it up, top it with a pile of ham slices and some provolone cheese, then finish it off in the oven. Heavenly!
I served it with some grilled asparagus and corn bread muffins.
There is nothing I love more than grilled chicken. It is just amazing.

Don’t second guess if your chicken is done or not. This Thermapen Mk4 is the best meat thermometer I have ever owned!
- BBQ Sauce (enough to marinate in)
- chicken breasts (4-6, enough for your family)
- ham slices (about 2 thick slices per breast)
- provolone cheese (one slice per breast)
Place chicken breasts in a zip lock bag. Pour in BBQ sauce to cover, and squish them around to coat them. Place in the fridge for at least two hours to marinate. (longer if needed) Move them around in the bag a couple of times during the marinating process if you can.
Grill the chicken until done.
Place chicken on a baking sheet, top with a pile of sliced ham.
Top with a slice of provolone cheese.
Bake at 350 degrees until cheese melts. About 10 minutes.
