Any chance I get to use cheese in a recipe creation I am so excited, especially when I can use Arla Dofino Cheese!
You may recall the Ham and Smoked Gouda Quiche I posted a couple of months back? That very quiche is what got my family utterly obsessed with Arla Dofino Smoked Gouda cheese. We have it in the fridge at all times now. My kids beg for me to make that quiche.
For this sandwich we used the Chipotle Gouda — oh. my. word.
My husband and I ate lunch at this kitschy restaurant in Captiva Island, Florida, last week, and I had a really yummy sandwich. That sandwich is what inspired me to make this for National Grilled Cheese Month!
It’s super simple, and can be made outdoors, like we did, or indoors. Any chance we get to use our grill and patio in Nebraska, we hop to it!
One large chicken breast makes three sandwiches, once it’s sliced thinly, then pounded with a meat mallet. I used cheese bread, sliced it nice and thick, buttered the outside, layered in my grilled chicken, crispy bacon and thick wedges of Arla Dofino Chipotle Gouda Cheese.
Grilled them on both sides til the bread was perfectly toasted, and the cheese was sneaking out the sides, begging to be eaten!
I should have taken a photo of the audience behind me while I was grilling. The whole family, even the dogs! All waiting patiently for dinner to hit their plates!

- 1 Large chicken breast sliced in 3 thin slices
- 1 package Arla Dofino Chipotle Gouda Cheese, sliced thick
- 9 slices of bacon, cooked crispy
Slice one large chicken breast thinly, and pound with a meat mallet. Sprinkle with salt and grilled until cooked.
Place one piece of chicken, 3 pieces of bacon and two large slices of Chipotle Gouda cheese between two slices of bread.
Butter the outsides of your bread, lay on a grilling griddle. When toasted, flip.
Cut and serve hot with tomatoes and pickle slices.
