How good do these Hawaiian BBQ Chicken Sandwiches look?? I didn’t even have to heat up my kitchen or sweat into a puddle outside to get the yummy taste of BBQ in the summer heat… I made these in the crock pot!
I love getting my assignment each month for the Secret Recipe Club! It’s like waiting for Christmas… IN JULY even!
This month I got a super fun and SUPER tasty blog, Cheese Curds in Paradise! Ashley is a wife and mother and one fantastic cook. You will find a little bit of everything on her blog, including a weekly meal plan. I spent a long time browsing, and finally told myself to pick a category to start narrowing things down!! So much to chose from!!
I picked sandwiches. This may sound like an easy one to choose from, but not on this blog! So many great choices! I can’t wait to try her Philly Cheese Steak Sloppy Joes and her Grilled Shrimp Po Boys! I Selected her recipe for Slow Cooker BBQ Hawaiian Chicken Sandwiches , because quite honestly, I LOVE pineapple…and it’s been fabulous lately!!
It also gave me a chance to use my new pineapple corer/slicer, and my crock pot in this summer heat!

This recipe takes only about 5 or 6 hours in the crock pot, then another couple of minutes to finish up the sauce after the chicken is shredded.
I love how the chicken cooks low and slow, it soaks up the flavors of the sauce, then the meat is shredded. A couple of additions to the sauce for flavor and thickening, then it’s all mixed back together. Back in the crock pot it goes, until you’re ready to serve it up!
I topped with sliced pineapple and green onions like Ashley suggested, and I served them up on the Hawaiian Rolls Hamburger Style Buns! Don’t you love that sweet taste of Hawaiian Rolls? They were PERFECT with this meat!
I was even plotting a pool party…. they would make great little mini sandwiches on the original Hawaiian Rolls, topped with chopped pineapple. I feel a party coming on…..

- 2 lbs boneless skinless chicken breast halves
- 1/2 cup ketchup
- 1/3 cup pineapple juice
- 1/4 cup low sodium soy sauce
- 1/4 cup honey
- 3 tsp molasses
- 1/2 tsp coconut extract
- 1/2 tsp ground ginger
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- freshly ground black pepper, to taste
- 1 Tbsp cold water
- 1 Tbsp cornstarch
- 2 Tbsp tomato paste
- Pineapple Rings and Green Onions
Place chicken in a crock pot. In a mixing bowl, whisk together ketchup, pineapple juice, low sodium soy sauce, honey, molasses, coconut extract, ginger, onion powder, garlic powder and black pepper. Pour sauce over chicken in slow cooker, cover with lid and cook on low heat for 5 - 6 hours. Remove chicken from slow cooker, shred and set aside. In a medium saucepan, whisk together cold water and cornstarch, pour in sauce from slow cooker and add tomato paste. Bring mixture to a boil over medium high heat, stirring frequently, then reduce heat and simmer 30 seconds, stirring constantly, until thickened. Return chicken to slow cooker (or the mixing bowl) and pour sauce over chicken, toss to evenly coat. Serve warm on Hawaiian Roll hamburger buns and top with pineapple rings and green onions.
