Easy Weeknight Dinner For the Win!
Have you ever had those little smokies that are wrapped in bacon then baked in brown sugar? These are kind of like that. But with a little bit of heat.
We typically eat them as a meal, but they also make a great appetizer. Consider cutting them in half again, to make them a bit smaller though.
How to prepare these Sweet & Spicy Bacon Wrapped Chicken
The recipe starts with 4 chicken breasts, cut into thirds.
Lay each chicken piece in a 9×13 baking dish, coated with 2 Tablespoons of Olive Oil.
Sprinkle chicken with spices, flip them over and sprinkle the other side.
Wrap each piece of chicken with a slice of bacon. Cover with brown sugar. Bake until the internal temperature of the chicken reaches 165 degrees F. In about 35 minutes, the bacon is crispy and it is OH SO GOOD!
Don’t second guess if your chicken is done or not. This Thermapen Mk4 is the best meat thermometer I have ever owned!

I got this recipe out of the “What’s Cookin’ – Harlan Newspaper” cookbook. Honestly, the only thing I would change is I would make more.
There are 6 of us, which allowed each of us 2 pieces of chicken, there were a lot of sad faces when there weren’t anymore.

Sweet & Spicy Bacon Wrapped Chicken
This easy Sweet & Spicy Bacon Chicken recipe will have your family begging for more -- slightly spicy, sweet chicken wrapped in bacon and baked or grilled up in about 30 minutes.
Ingredients
- 4 chicken breasts, cut in thirds (12 pieces)
- 12 slices of bacon
- 2 teaspoons salt
- 2 teaspoons pepper
- 2 teaspoons Garlic Powder
- 2 teaspoons Chili Powder
- 2/3 cup brown sugar
- 2 Tablespoons Olive Oil
Instructions
- Preheat oven to 400 degrees.
- Cut each chicken breast into thirds, leaving you with 12 pieces.
- Lay chicken pieces in a 9x13 baking dish, coat with 2 Tablespoons of Olive Oil. (can use non-stick cooking spray also) Sprinkle chicken with spices, flip over and sprinkle the other side.
- Wrap each piece of chicken with a slice of bacon. Roll in brown sugar.
- Bake for 30-40 minutes, or until chicken is cooked through and bacon is nice and crispy.
- Drizzle with glaze it made and serve.
Notes
Grilling Method: To grill, sprinkle chicken with spices, wrap with bacon, roll in brown sugar, and place on grill, turning until cooked through.

Stuck at home for Easter this year due to the “stay home, stay safe” orders. I have been eyeing this recipe for sometime and I finally was able to score bacon this week. I had chicken tenderloins already on hand so I used those instead of the full chicken breasts cut up. YUM YUM and YUM!!!! EVERYONE loved it. Definitely will be one of my regulars, or either regular on holiday meals. Either way, it’s a keeper!

Tom – I am not sure what happened there? I always mention that the nutrition calculations cannot be guaranteed as accurate, as there are so many variations in what people use to prepare the same recipes. I went back and tried to recalculate it, and it looks more accurate now. I hope this helps!
