Everyone has their favorite, so I typically make multiple flavors, but this one in particular is a fan favorite. If you already have your breakfast tradition, this recipe is a fantastic way to use up leftover ham after the holiday meal. Repurpose it into this yummy ham and gouda cheese quiche. We love it for dinner with a nice green salad on the side.

Perfect to make ahead, quiche has always been our go-to breakfast on the weekends but if you’ve prepared it ahead of time, it makes for a quick, easy, and nourishing weekday morning meal or even a light lunch. This ham quiche is always my favorite option for Mother’s Day or Father’s Day but you can also serve it at a baby shower or bridal shower.
I love quiche because it is flexible. You can modify the ingredients based on what you have on hand, use a homemade or store-bought pie crust, change up the cheese, or swap the filling.

- Pie crust: Feel free to make your own or pick up a pie shell at the grocery store, you can use a fresh or frozen crust. If you make your own and have extra dough, prepare these Pie Crust Cookies.
- Shallots: Chopped shallots add a mild onion flavor. If you don’t have any on hand you can substitute with onions.
- Smoked ham: Smoky and savory ham adds a deep flavor to the quiche. Pick one up at the grocery store or make this smoked spiral ham recipe.
- Smoked Gouda Cheese: More smokiness with smoked shredded Gouda cheese. Make sure to shred or grate it.
- Eggs: I tend to use large eggs but any kind of eggs will work to make this quiche. Use whatever you’ve got in the fridge.
- Half & Half: I like to use half and half for this quiche but you can substitute it with any type of milk though it will not be as rich.
- Chives: Chopped chives add even more savory flavor. Fresh or dried will both work.
- Salt: You’ll need a pinch of salt to enhance the flavors.
- Sugar: A touch of sugar helps balance the savoriness of the salty ham.

How to make ham and smoked gouda quiche
This easy recipe is super simple to prepare in just a few steps and if you have ever been intimidated by the idea of making quiche, please know that this recipe is tried and true, and no matter what I use for the add-ins, the base part? Always turns out great.
Preheat oven to 425 degrees, and line a 9-inch deep dish pie plate with a pie crust.
Lay chopped shallots in the crust. Top with the chopped ham. Sprinkle with shredded cheese.
In a large bowl, whisk together eggs and half & half, and whisk in the salt, sugar, and chives.
Pour the egg mixture over the top of the cheese.
Bake for 15 minutes in the preheated oven. Reduce oven to 300 degrees and bake for 30 minutes more. Let sit for 10 minutes before slicing.
Bring the quiche to room temperature and then store it in an airtight container or wrap it in aluminum foil or plastic wrap and place it in the fridge for 3-4 days or the freezer for 3 months. Thaw in the fridge overnight and reheat in the oven.
