Fiesta Corn Dip (Easy 5 Ingredient Dip)

Fiesta Corn Dip -As the title states – this is a party in a dip! Cream cheese – Yum! Tomatoes – Yes! Olives – you have olive my love.  Ranch seasoning – Yes, please! And, Corn – you had me at hello. Sorry to be so corny… but this easy Mexican corn dip recipe has it ALL.

My nephew’s wife (my niece-in-law?) shared this easy recipe with me at the beginning of the summer and I have been hooked ever since! Now that summer is about over, and tailgate season is upon us, I thought I would share it with you.

Because, let’s face it, my favorite thing about parties of any kind is the food, and easy dips are number one in my book!

If you are a fan of corn (ME!) you know that corn makes everything better. With 5 simple ingredients, you can put this cheesy dip together in no time. This Mexican corn dip with cream cheese is always a crowd pleaser and perfect for game day, Cinco de Mayo, a potluck, BBQs, or any day of the week!

INGREDIENTS NEEDED

This homemade dip recipe is beyond simple. You will find all of the measurements and full instructions at the bottom of the post in the printable recipe card.

  • Cream cheese – You can substitute Neufchatel cheese for a lower-calorie version or any form of sour cream.  However, using sour cream will yield a thinner consistency
  • Rotel tomatoes – I use the Original Rotel Tomatoes with Green Chilies. You can use the mild or the hot Rotel if you want to adjust the heat. 
  • Black olives – I like to use pre-sliced olives, but you could substitute chopped olives or slice or chop them yourself
  • Mexicorn – I use the Green Giant brand of Mexicorn which comes in the 7 oz can this recipe calls for.  Del Monte makes “fiesta” and “southwest” corn varieties which would also work in this recipe.
  • Hidden Valley Fiesta Ranch Dip Mix – You can substitute a generic brand of ranch dip mixed with a tablespoon of taco seasoning

HOW TO MAKE FIESTA CORN DIP

Easy fiesta corn dip comes together in less than 5 minutes!

FIRST: Combine room temperature cream cheese with fiesta ranch seasoning in a mixing bowl and whip until smooth.

SECOND: Add tomatoes and Mexicorn and stir gently until combined.

THIRD: Gently fold in sliced olives.

FOURTH: Transfer dip to a serving bowl and garnish with a few sliced olives. Serve with corn tortilla chips. Watch ‘em dig in!

FAQ’S About Fiesta Corn Dip & Its Ingredients

What is Mexican corn dip made of? Mexican corn dip is a creamy combination of cream cheese, tomatoes, green chilies, black olives, fiesta ranch seasoning, and of course, corn!

Are Mexicorn and fiesta corn the same thing? Yes! They are made up of the same ingredients; corn and peppers. They are just named differently by their respective brands.

What is Mexicorn? Mexicorn is a combination of corn, green peppers, and red peppers. If you can’t find it where you live, simply use canned corn and canned green chiles instead. Add in some diced red bell peppers for color if you like.

Can I freeze Fiesta Corn Dip? Due to the amount of dairy in the cream cheese, this dip will not freeze well, most likely separate, and will lose its original consistency.  If you do happen to have any leftover dip (which I doubt you will if you make it for a crowd), keep it in the fridge for up to 5 days.

SUBSTITUTIONS:

  • Cream cheese – You can substitute Neufchatel cheese for a lower-calorie version or sour cream.  If you prefer a sour cream-based dip, you may want to substitute an entirely different recipe, like my (Award Winning) Crack Corn Dip
  •  Rotel tomatoes – I use the Original Rotel Tomatoes with Green Chilies. You can use the mild or the hot Rotel depending on how spicy you like your dip. You can substitute any brand of tomatoes with green chilies.  Or, you can add a can of diced green chilis to fresh chopped tomatoes.
  • Black olives – I use pre-sliced olives, but you could substitute chopped olives or slice or chop them yourself.
  • Mexicorn – Green Giant is the official brand of “Mexicorn” and comes in the 7 oz can this recipe needs.  Del Monte makes “fiesta” and “southwest” corn varieties which would also work in this recipe.  You could also create your own Mexicorn version using canned, fresh or frozen corn kernels, diced green pepper and diced red pepper.  If you want to kick up the spice, you could substitute jalapeno peppers for the green peppers.
  • Hidden Valley Fiesta Ranch Dip Mix – You can substitute a generic brand of ranch dip seasoning mixed with a tablespoon of taco seasoning.
  • Instead of ordinary corn tortilla chips, blue corn chips are always fun. Corn chips, like Fritos or pita chips, would be great too!

Can I use fresh corn in this fiesta dip recipe?

Fresh corn could be used in this recipe. However, you will need to make sure it’s cooked, and that you add in the chile peppers. Opening a can of MexiCorn is certainly easier!

TIPS AND TRICKS

  • Use room temperature cream cheese for easier mixing. You can use a hand mixer or a stand mixer.
  • There are multiple options for add-ins such as jalapeno peppers, hot sauce, shredded cheddar cheese, sriracha sauce, red onion, cilantro and green onions.
  • This dip will stay fresh in the fridge for 5 days if stored in an airtight container. I do not recommend freezing this dip.

Ingredients

  • 2 8 ounce packages of cream cheese, softened
  • 1 10 ounce can Rotel tomatoes, do not drain
  • 1 3.8 ounce can sliced black olives, drained
