Blackened Salmon Burgers with BLT Slaw

So excited to be sharing my 2020 contribution to #BurgerMonth! This year, I switched it up a bit, and didn’t use meat at all! I made these Blackened Salmon Burgers, and I perfected them by adding this amazing BLT Slaw to the top — a simple “chop salad” of sorts, with a bacon mayonnaise dressing.

 

In the last two years, I used both beef and Italian sausage. My first year participating I made Italian Burgers, then last year I made two burgers, this Red, White & Bleu Burger and a Bloody Mary Burger!

Blackened Salmon Burgers #BurgerMonth

Burgers are always great under any circumstances, but sometimes you need to go off road… Off the beaten path… Down a weird and winding trail to something that satisfies like a burger. Yet it is actually not a typical burger. When you are in that sort of mood then a blackened salmon burger makes complete sense. 

 

What is blackened seasoning?

Blackened seasoning is similar to Cajun spice and Creole seasoning. However, it is slightly different in terms of proportions. They all share pretty similar ingredients, but blackened seasoning is less spicy than the other two. 

If you only have Cajun or Creole spice mix though, by all means, use those. If you have those on your shelf, then you probably go for things being a bit spicier anyway.

My Blackened Seasoning is a mix of paprika, cayenne, black pepper, oregano, basil, salt, and garlic powder. It isn’t actually “blackened” until you cook it on or in the dish, but it is savory and does have a natural smokiness regardless. 

 

 

How to grill  blackened salmon burgers

Make sure the grill isn’t too hot.  We kept our grill at about 350 degrees or just a touch lower the whole time. The salmon cooks very quickly. You only need a few minutes per side and it is done. 

The blackened seasoning does add a bit char flavor, which is nice. Salmon cooks a lot faster than beef or pork burgers.  I always cook them on a grill mat, not directly on the grates, because you have to be really careful so they don’t fall apart. These burgers cooked in about 10 minutes.  The internal temperature with a meat thermometer should be 160 degrees F. 

 

 

Can you melt cheese on a salmon burger?

It is pretty easy to generalize about fish and cheese not always going well together. But that doesn’t stop McD’s from serving millions of their filet o’ fish sandwiches. So there is really no reason you can’t do a variation on a blackened salmon burger. Why not a salmon cheeseburger?

If you had to pick an ideal cheese to melt onto your salmon patty though, I recommend provolone. It has a bit of a fishy funkiness to it without being too much. It melts well and you can find it easily pre-sliced.

 

How to Make Blackened Salmon Burgers & BLT Slaw

You’d think a salmon burger would be pretty fancy-schmancy to make — these here?  Once you mix up that blackened seasoning we talked about, you mix it up with salmon fillets and bread crumbs in the food processor. The BLT Slaw is amazing! I mix it up first and keep it in the fridge while I make the salmon burgers.  

 

Begin by making your Bacon Mayonnaise a.k.a. Baconnaise.  In your food processor, combine the mayo with bacon and a little bacon grease.

 

Combine the bacon mayo dressing with some chopped lettuce and tomato and you’re set!

 

Next up — Blackened Salmon Burgers!

 

 

I love my little Kitchenaid 3.5 cup mini food chopper! Cut the salmon filets in big chunks, add them the bread crumbs and the seasoning and combine it until it’s mixed together, but not totally smooth.  You want some chunks of salmon, too.

 

Here it is before I made it into my four patties.

When the burgers are almost done, slather some butter on the insides of the buns and toast them on the grill.  

 

 

 

Stack the salmon patty on the toasted bottom bun, pile on a big ‘ol mound of BLT Slaw – top with the other half of the bun, and get ready to chow down!

What sides go well with salmon burgers?

Since you use the coleslaw as a lettuce substitution on top of the blackened salmon, you may want other sides to go with your burger. I have some suggestions which work whether you use the grill or not for cooking. Of course, with nice weather, getting out and cooking on the grill is always a great way to go!

Salmon goes great with every kind of side that burgers or brats go well with. For good reason, salmon is a very rich and fatty fish. (Those healthy fish oil fats we all need more of in our diet). So it pairs well with some classic burger sides too.

Ingredients

For the Blackened Seasoning:

  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon basil
  • 1 teaspoon oregano

For the Salmon Burgers

  • 1 pound salmon filet boneless and skinless
  • Blackened Seasoning Mix from above
  • 1/3 cup bread crumbs
  • 4 hamburger buns toasted

For the BLT Slaw

  • 1 small tomato chopped
  • 2 cups lettuce chopped
  • 6 pieces of bacon fried crispy and crumbled
  • 1 teaspoon bacon grease
  • 1/2 cup mayonnaise

Instructions

  • Prepare the BLT Slaw by mixing the bacon, bacon grease and mayo together, in your food processor. Add it to the lettuce and tomato. Refrigerate until ready to use.
  • Prepare the blackened seasoning by mixing all of the spices together.
  • To Prepare the Salmon Burgers. Break salmon into large chunks. Place the salmon, the bread crumbs and the blackened seasoning in a food processor. process into pieces that are about 1/4" - stop to scrape the sides of the processor as needed. Form mixture into 4 equally sized patties.
  • To Grill the Salmon Burgers: Preheat your grill to 350 degrees. Place salmon patties on a grill mat on the grill, and flip them after 5 minutes. Continue cooking for an additional 4-5 minutes. Or until the internal temperature is 160 degrees.
  • Butter the insides of the buns and place them on the grill or in a skillet to toast them.
  • To Assemble the Salmon Burgers: Place the patty on the bottom bun, top with BLT Slaw and top bun. Add any other topping you may want. Avocado is delicious on them.
