Prepare the BLT Slaw by mixing the bacon, bacon grease and mayo together, in your food processor. Add it to the lettuce and tomato. Refrigerate until ready to use.
Prepare the blackened seasoning by mixing all of the spices together.
To Prepare the Salmon Burgers. Break salmon into large chunks. Place the salmon, the bread crumbs and the blackened seasoning in a food processor. process into pieces that are about 1/4" - stop to scrape the sides of the processor as needed. Form mixture into 4 equally sized patties.
To Grill the Salmon Burgers: Preheat your grill to 350 degrees. Place salmon patties on a grill mat on the grill, and flip them after 5 minutes. Continue cooking for an additional 4-5 minutes. Or until the internal temperature is 160 degrees.
Butter the insides of the buns and place them on the grill or in a skillet to toast them.
To Assemble the Salmon Burgers: Place the patty on the bottom bun, top with BLT Slaw and top bun. Add any other topping you may want. Avocado is delicious on them.
