Almond Joy Brownie Bites
These perfectly fudgy Almond Joy Brownie Bites make great party food and are fantastic on a holiday tray. But don’t let the lack of holidays or a party invite keep you from making this scrumptious mini brownie recipe!
The recipe couldn’t be simpler, using common pantry ingredients, from the boxed brownie mix, and packaged sweetened flaked coconut to the almonds and sweetened condensed milk. They bake up in a mini muffin pan and make 48 brownie bites.
Of course, if you don’t want to be tempted to eat all 48 of these coconut filled, chocolate covered brownie balls all on your own during a weekend Netflix binge, you can always make a smaller brownie mix (an 8×8 sized mix vs a 9×13) or you can freeze some of them for later.
“But what about that leftover sweetened condensed milk I won’t use?” you ask? Well, that freezes too, or you can always mix up a half batch of my Mini-Vacation Cocktails to enjoy while you relax and binge.
How These Almond Joy Brownie Bites Came to Be
Back in 2013 when I first made these, they came from a request from somebody very special to me, my Father-in-Law, Denny.
If you’re reading this, chances are you are like the lot of us that loves when recipes are shared online. (I especially love it when you share mine! *grin* )
Denny loved sweets, even more, he loved coconut and chocolate. My kids always gave him all of their Almond Joy bars from their Halloween candy bag.
Back then while he was perusing Facebook and actually requested I make these. How could I resist? I mean, I hit the jackpot in the Father-in-Law department, after all!
When we lost Denny in 2018, he left a huge hole in our family. We miss him terribly. Among so many other things, chocolate coconut desserts and Almond Joy’s will forever remind me of him.
How to Make Almond Joy Brownie Bites
1. Prepare mini muffin cups with non-stick cooking spray. 2. Prepare brownie mix according to the package instructions, and fill muffin cups about 1/2 full. 3. Bake according to package directions. Mine took about 15 minutes. 4. Remove brownies from tins, stick an almond in the top of each brownie.
5. While they are cooling, combine sweetened condensed milk and coconut in a bowl. 6. Press a ball of coconut on top of each brownie, and put in the freezer for about 30 minutes. 7. Melt chocolate candy according to package instructions. 8. Dip the tops of the brownies in chocolate and place on a cookie sheet lined with waxed paper, place in the refrigerator to set.

Tips for success: Use a cookie scoop to get the balls of coconut the same size. Press the almonds into the middles while the brownies are still warm. Take them out of the freezer a dozen at a time so they stay nice and cold before you dip them.

If you love nuts then almonds happen to be a great one to love. You can get a lot of nutrition from one ounce of almonds.
They are an excellent source of antioxidants, vitamin E and magnesium and provide 6 grams of protein and 4 grams of fiber. Almonds are an excellent source of calcium, potassium, phosphorus and iron, too. They are naturally gluten-free, and cholesterol-free, and full of that “good” unsaturated fat.
But what if you’re not nuts about almonds? Then leave them out and you have Mounds Brownie Bites!

Almond Joy Brownie Bites
Ingredients
- 1 – 9×13 size brownie mix
- 4 cups sweetened flaked coconut
- 1 -14 ounce can sweetened condensed milk
- 1 package of chocolate almond bark or chocolate candy quick
- 4 dozen almonds
Instructions
- Prepare mini muffin cups with non-stick cooking spray.

- Remove brownies from tins, stick an almond in the top of each brownie.
- While they are cooling, combine sweetened condensed milk and coconut in a bowl.
- Press a ball of coconut on top of each brownie, and put in the freezer for about 30 minutes.
- Melt chocolate candy according to package instructions.
- Dip the tops of the brownies in chocolate and place on a cookie sheet lined with waxed paper, place in the refrigerator to set.
