Recently, I did a little poll on my facebook page, asking my followers what sorts of recipes they are interested in seeing over the summer. There were lots of ideas, but the overwhelming ask for salads was what I noticed most.

Everyone was looking for light and simple recipes that didn’t require heating up the kitchen. This pea salad is perfect for summertime. Especially if you are lucky enough to have fresh cauliflower growing in your garden right now.
I came across this recipe in one of my oldest cookbooks. It came from my grandma in 1985.
I have been struggling with a bit of writers block lately. Going through old cookbooks sometimes offers me inspiration.
I came across a few recipes for pea salad, but this one caught my eye. Most were that typical one with the chunks of cheese. This one with the crisp cauliflowerettes was just different from anything that I had seen.

I have a little secret though. I absolutely hate peas. Ever since I was a little kid, and my mom made the canned ones. Gak!
I wouldn’t even feed the kids baby food peas when they were little, because of the smell. But somehow… they all LOVE them.
I love sugar snap peas and snow peas, and I use them all the time. Two of my favorite ways are in this Beef Lo Mein and this Asian Beef, Mushrooms and Snow Peas recipe.
More recently I have discovered pea shoots and I LOVE them in salads. Here they are atop this Green Salad with Lemon Thyme Vinaigrette.
One thing about our kids, they were always expected to try everything. They all eat just about everything, too. That being said, when I fix peas, I always ate them. I swallow them like pills … but I eat them. LOL!!
What is in this Pea Salad with Cauliflower?
- frozen peas
- onion
- celery
- cauliflower
- mayo
- mustard
- dill
- sugar
The dressing for the salad is perfectly light. It’s base is mayonnaise, with just a bit of prepared mustard, a touch of sugar to add a bit of sweetness and some fresh dill.
Bring a pot of water to boil on the stove, and submerge the peas, onion and celery for two minutes. Rinse with cold water. Drain.
Place in a bowl.
Stir in cauliflower.
Mix in dressing.
Now I will tell you I did taste it, but I picked out cauliflower and celery. We had it with my Dr. Pepper BBQ Ribs (which I made in the crock pot) and tater tots (made in the air fryer) for dinner last night, and my family literally freaked out over the salad. It was a great summer meal, and I didn’t heat up my kitchen!
My daughter said “I love pea salad, but I never get to eat it unless I am at a funeral luncheon.” I asked her if she missed the cheese cubes in it, and she said, no. All of them said the cauliflower was way better than the cheese cubes. All that was left of this pea salad is a memory today.

Pea Salad with Cauliflower
Ingredients
- 3 cups frozen peas
- 1 cup 4 stalks celery, chopped
- 1/4 cup onion chopped
- 1 cup cauliflower
- 1/3 cup mayo
- 1 teaspoon mustard
- 1/2 Tablespoon sugar
- 1/4 teaspoon dill
Instructions
- Bring a pot of water to boil.
- Combine mayo, mustard, sugar and dill. Set aside.
- Drop frozen peas, onion and celery into the boiling water for no longer than 2 minutes. Drain and rinse with cold water.
- Combine the mixture with cauliflower and dressing.
- Chill until ready to serve.
