Frozen Pineapple Margaritas

This twist of a classic margarita has the added sweetness of pineapple chunks mixed with triple sec and agave. Easily modified to your sweetness liking you can add more or less or make it spicier by increasing the amount of cayenne on the salted rim. In my books, a good margarita has the perfect balance of sweet and tart with a touch of spice.

FOR THE DRINK:

  • Ice
  • Pineapple chunks: Use frozen pineapple for the best texture. You can always freeze fresh pineapple for a few hours if you don’t have frozen pineapple in the freezer.  Make sure to freeze ripe pineapple for extra sweetness.
  • Jalapeno: A fresh jalapeno adds a touch of spice.
  • Lime juice: Use fresh lime juice to add that tart freshly squeezed flavor.
  • Agave nectar: I used agave to sweeten up the margarita but you can use maple syrup or honey. Or leave it out altogether.
  • Tequila: Use your preferred brand of tequila.
  • Triple sec: This orange liqueur adds more citrus flavors. You can also use Grand Marnier or Cointreau.

OPTIONAL FOR THE GARNISH:

  • Cayenne pepper: Use as much or as little as you like for a slight kick.
  • Salt: The combination of cayenne and salt is a nice contrast to the sweet pineapple margarita. I like to use coarse salt as it has a great texture.
  • Lime slices: Lime slices add some color.
