Easy Banana Pecan Sticky Rolls

I recently found the very tattered piece of paper this recipe was on, stashed away in a pile of recipes that I want to make someday. It came from my friend Candi. The first time I had them, I had gone for a visit to her home in Oklahoma years ago, and I remember her making these banana rolls for breakfast. I have always wanted to share them, and then I misplaced the recipe for over a decade. Well, today the waiting ends. This may be your new favorite way to make sticky rolls.

Have a bunch of ripe bananas on your counter? This recipe is great for that. Plus, it uses Bisquick Baking Mix. There is no instant yeast required, and no need to wait for the first dough rise or the second rise. You mix it together, roll it out, slice it, and bake it in a muffin tin! Doesn’t get much easier than that!

 

INGREDIENTS NEEDED FOR BANANA PECAN ROLLS

  • Melted butter
  • Brown sugar – You can use light or dark brown sugar.
  • Pecans – Look for chopped pecans or chop them yourself.
  • Bisquick – This is my brand of choice, but you could use different brands of baking mixes such as Jiffy or Krusteaz.
  • Bananas – You will need very ripe mashed bananas for this recipe.

 

HOW TO MAKE THESE BANANA STICKY ROLLS WITH PECANS

Place melted butter, brown sugar, and chopped pecans in the bottom of each muffin tin section. Stir to mix the butter, sugar, and pecans together and set aside.  

In a large bowl, mix the mashed bananas and the Bisquick together until a dough forms. 

Knead the dough and roll the dough out on a lightly floured surface to form a rectangle.

Sprinkle the dough with the remaining brown sugar and pecans.

Roll up “jelly roll style” starting at the long end. Cut into 12 even slices.

Place one roll into each of the muffin cups.

Bake until golden brown for 10 minutes in the oven that has been preheated to 450 degrees F. 

Turn the rolls upside down onto a cutting board and let them rest for a couple of minutes. This will allow the sticky sugar to run down into the rolls.

Serve warm and ENJOY!

FAQS When Making These Banana Nut Cinnamon Rolls

  • How ripe should my bananas be for baking? The perfect banana for baking bread, muffins, or these rolls is an overripe banana. If it’s too soft for your cereal or eaten by itself, it is probably just right for baking. The best bananas for baking will not be yellow, but rather brown or black. Overripe bananas will be sweeter and have a more intense banana flavor.
  • How do I ripen bananas? Bananas will ripen (or overripen) at room temperature. It depends upon the climate where you live, but this could take a few days or up to a week. If you need to expedite the ripening process you can use this method: Poke holes in unpeeled bananas with a fork or a small knife. Place the bananas on a microwave-safe plate and cook the bananas for 30-seconds at a time until they become mushy and soft.
  • Can I store bananas in the freezer? Yes, you can! When you see your bananas on the brink of overripening, you can stick them in a zipper bag and store in the freezer. You will have ripe bananas ready for baking. Simply take out the bananas you need and let them thaw to room temperature. Now you are ready to bake. This is a great way to always have ripe bananas on hand when you need them. FYI – they will turn black in the freezer. 

 

SUBSTITUTIONS

  • Banana Cinnamon Rolls: If you want another layer of spice and warmth, add a teaspoon of cinnamon to your batter. You could also omit the pecans if desired for a nut-free roll.
  • You can substitute walnuts for pecans. Or, experiment with other nuts too!
  • For a dairy-free version, you can substitute vegan butter, coconut oil, or margarine instead of melted butter.
  • For a frosted cinnamon roll, whip up a batch of cream cheese frosting on top.

TIPS AND TRICKS

  • You can also place your rolls in a 9×9 baking dish instead of muffin tins. If using a baking dish, you will distribute the melted butter, sugar, and nuts all over the pan before placing the sliced rolls on top. *Note – you will not rise the rolls so they won’t take up the whole pan. 
  • If you are struggling to release the rolls out of the muffin tins, run a sharp knife around each one before turning it upside down.
  • If you have any leftover rolls, you can cover them tightly with plastic wrap, or foil or place them in an airtight container for 1-2 days at room temperature. After a couple of days, you can store them in an airtight container in the fridge for 5 to 7 days.
