INGREDIENTS NEEDED FOR SAUSAGE TORTELLINI SOUP RECIPE

You will find the complete ingredients, instructions, and cooking time in the printable recipe card at the bottom of this post.

  • Chicken stock – You can substitute chicken broth, beef stock, or vegetable broth.
  • Diced tomatoes – Use regular, petite, or canned tomatoes with garlic.
  • Italian sausage – I prefer mild Italian Sausage because it gives a little bit of heat, but you can use hot Italian sausage or any type you prefer. I buy the ground Italian sausage, but you can remove the casings from the links if you can’t find it.
  • Cheese-filled tortellini – You can find refrigerated or frozen tortellini in your grocery store or homemade fresh tortellini will work. Store-bought tortellini provides the ease of putting this delicious soup together.
  • Baby spinach – About two big handfuls of fresh spinach!

Add in tortellini and cook until done.

Right before serving, toss in the spinach and give it a minute to wilt.

Garnish with some fresh parmesan cheese and serve hot. Enjoy!

FAQs About Tortellini Soup

What goes with tortellini soup? Soup can generally stand on its own, but if you feel the need to have a side dish (like me!) here are the best options to serve with tortellini soup. You can garnish your soup with some homemade croutons or some parmesan crisps. Focaccia, flatbread, or breadsticks are always a good idea, too!

What goes better with soup than salad? You can serve a simple green salad or caesar salad or really make it special by serving your salad in one of these Parmesan Cheese Salad Bowls!

What is the difference between tortellini and tortelloni? Both are pasta of similar shapes, but tortelloni is typically larger. Tortellini is often filled with meat, but can also be filled with cheese. Tortellini is often cooked in and served in broth so they make a wonderful addition to soups. Tortelloni is traditionally filled with ricotta and sometimes also with spinach or parsley. Tortelloni is typically cooked in water and then fried with butter and sage.

SUBSTITUTIONS/ADDITIONS:

  • You can swap kale for spinach.
  • You can try this soup with ground sausage or ground beef cooked with diced onion and minced garlic instead of the sausage.
  • If you want creamy tortellini soup, just add a cup of heavy cream and you will have creamy sausage tortellini soup!

TIPS AND TRICKS

  • I love to garnish this soup with some grated parmesan cheese and some fresh basil. You can also sprinkle a little Italian seasoning, black pepper, or red pepper flakes for a little more spice. For a little extra pop of tomato flavor, you can add a tablespoon or two of tomato paste.
  • If you have leftovers, you can store leftover soup in the refrigerator in an airtight container for up to 3 days. I do not recommend freezing this soup. Note that the tortellini does soak up the broth as it sits. You may need to thin the soup out when you enjoy it for leftovers.

Tortellini Soup with Sausage in the Slow Cooker

Want to make this yummy soup in your crockpot? After browning the sausage, add it to your crock pot along with the broth and tomatoes. Cook on low for 4-5 hours or high for 2-3 hours. Add tortellini and cook for 30 more minutes. Add spinach and cook for 10 minutes and serve.

  1. This soup was fantastic. I used mild Italian ground sausage, diced tomatoes which included garlic, basil, and oregano, and fresh tortellini. It had a great flavor that was even better as leftovers. I highly recommend this easy to make recipe.
