Taco Tuesday will never be the same – we have merged the taco and the beloved tater tot casserole to make this delicious (and EASY!) family meal!
Two things kids love? Tacos + tater tots — am I right? I thought, why not merge these two family favorites and make one delicious and simple meal that the whole family is sure to enjoy??
We have been enjoying more casseroles lately. Something about pulling a casserole out of the oven on a chilly fall night, just encompasses comfort. Even better when “said casserole” is super duper easy and the whole family gives a resounding “YES!” when it hits the kitchen table.
RO*TEL is a staple in our house. It’s on the store slip before we ever run out, one can left — add it to the list! 😉 I use it all of the time, in dips, casseroles, soups, you name it. It comes in a couple of different “heats” — we love the original in our house. Sure, you could open a can of tomatoes and a can of green chilies, but why, when you can simply open one can of RO*TEL and you’re done!?
I love the zip it gives recipes, it just has that unmistakable taste we truly love.
I picked up everything I needed for my casserole at my local Walmart. You can find the RO*TEL in the tomato sauce aisle. I grabbed some lean ground beef from the meat department and headed to the produce section to grab some toppings. You can literally top the casserole like you would a taco, OR just put them along the side. I just made a little salad next to mine.
Just a few items, and this casserole is well on it’s way!
After the ground beef is browned, add in your taco seasoning, RO*TEL and pinto beans.
Spread into the bottom of a 9×13 baking dish.
Top with shredded Mexican cheese and green onion.
Top with tater tots.
When it comes out of the oven, the tater tots are crispy and the meat and cheese is bubbly and fragrant.
A welcome scent as everyone filed into the kitchen for dinnertime.
I actually cut my time WAY down when I made this, and made it ahead of time. I popped it in the oven on time bake when I headed up to school for Art Club that I help with weekly after school. It was ready and waiting when we got home. I grabbed the toppings out of the fridge, and we were ready to dig in…
… and dig in we did!

Taco Tot Casserole
Ingredients
- 2 pounds lean ground beef
- 1/2 cup onion chopped
- Salt & Pepper
- taco seasoning packet
- 1 10 oz can RO*TEL
- 1 15 oz can pinto beans, drained
- 1 30oz package tater tots
- 2 green onions. sliced
- 2 cups Mexican cheese shredded
- For Toppings: sour cream avocado lettuce and tomatoes
Instructions
- Preheat oven to 350 degrees, spray a 9x13 baking dish with non-stick cooking spray.
- Brown ground beef with onion. Salt & pepper to taste. Drain any excess grease. Add to the meat, RO*TEL and pinto beans. Stir to combine and spread into the bottom of your baking dish.
- Top with cheese and green onions.
- Top with tater tots.
- Bake for 45 minutes.
- Serve with your toppings of choice.
