Taco Tater Tot Casserole

Taco Tuesday will never be the same - we have merged the taco and the beloved Tater Tot Casserole to make this delicious (and EASY!) family meal!

Ingredients

  • 2 pounds lean ground beef
  • 1/2 cup onion chopped
  • Salt & Pepper to taste
  • 1 taco seasoning packet
  • 1 10 ounce can RO*TEL tomatoes
  • 1 15 ounce can pinto beans drained
  • 1 30 ounce package tater tots
  • 2 green onions sliced
  • 2 cups Mexican cheese shredded
  • Optional Toppings: sour cream avocado, lettuce, tomatoes

Instructions

  • Preheat oven to 350 degrees, spray a 9x13 baking dish with non-stick cooking spray.
  • Brown ground beef with onion. Salt & pepper to taste. Drain any excess grease. Add to the meat, RO*TEL and pinto beans. Stir to combine and spread into the bottom of your baking dish.
  • Top with cheese and green onions.
  • Top with tater tots.
  • Bake for 45 minutes.
  • Serve with your toppings of choice.

Notes

How to Store & Reheat Leftover Tater Tot Casserole
Let the casserole cool completely before storing. Cover the baking dish tightly with foil or transfer leftovers to an airtight container and refrigerate for up to 3 days.
For the best texture when reheating, warm leftovers in the oven at 350°F until heated through, or use the air fryer to help the tater tots crisp back up. The microwave works well for quick lunches, but the tater tots will be softer.
If you know you’ll be reheating individual servings, storing leftovers in portioned containers makes things even easier.
