Slow Cooker Cilantro Lime Pork
Ingredients
- 2 pounds pork tenderloin
- 1 1 ounce package taco seasoning mix
- ½ cup chicken stock
- 2 Tablespoons fresh lime juice + 1 teaspoon lime zest
- ¼-1/3 cup fresh cilantro snipped + more for serving if desired
- For serving: sliced avocado lime wedges, fresh jalapeño, tomatoes or salsa
- Serve on flour tortillas like tacos or in bowls with rice and pinto beans.
Instructions
- Place pork in slow cooker, sprinkle with taco seasoning and pour in lime juice, zest and chicken stock. Cover and cook on low for 6 hours.
Shred meat and return to liquid in the slow cooker, stir in cilantro.
Serve warm meat from slow cooker on tortillas or in rice bowls, garnished to your liking.

That isn’t that much different- I think you will be fine to leave the ingredients the same. It may get done a bit sooner? I’d check it at 5 hours and see if it shreds. If so, you are all good! 🙂
How can I do this in a pressure cooker ?
I have never made this recipe in an instant pot. I found this recipe for pork tenderloin online with cooking times. I think that if you followed it using the spices you would be successful. Otherwise, look for the cooktimes in your instant pot cookbook that came with your machine, taking care to no overfill the pot etc.
