With this Homemade Toaster Strudel Recipe, you can make your own pastries made of flaky puff pastry, bursting with fresh blueberries and topped with homemade toaster strudel icing. You’ll never go back to pre-made strudel again!

Although this recipe takes a little more effort than just opening a package and popping a tart into the toaster, I promise it will be worth the effort! Nothing beats a homemade pastry and this recipe uses simple ingredients and is quickly put together. Not to mention, you will not have any added high-fructose corn syrup or any of those other “mystery” ingredients. In less than an hour, you can have homemade, mouth-watering warm pastries with a delicious glaze.

INGREDIENTS NEEDED FOR HOMEMADE TOASTER STRUDELS

  • Frozen blueberries – You can use fresh blueberries too.
  • Lemon juice – Fresh is best!
  • SugarWhite sugar is called for, but you can use any type of sugar you like.
  • Cornstarch – will thicken the filling
  • Vanilla extract – Use 100% pure extract.
  • Puff pastry sheets – My brand of choice for store-bought puff pastry dough is Pepperidge Farm. Thaw your sheet of puff pastry before starting the recipe.
  • Egg – Beaten to make an egg wash.

INGREDIENTS NEEDED FOR TOASTER STRUDEL FROSTING

  • Powdered sugar – Otherwise known as confectioner’s sugar.
  • Almond extract
  • Vanilla extract
  • Heavy cream – You can also use whipping cream.

 

HOW TO MAKE DIY TOASTER STRUDELS

Combine blueberries, lemon juice, cornstarch, and sugar in a small saucepan over medium heat. Bring mixture to a boil and then gradually simmer for about 7 minutes, stirring frequently. Remove from heat and allow to cool completely. 

Next, Preheat your oven to 425 degrees F. Line a large baking sheet with parchment paper. 

On a lightly floured surface, cut each puff pastry sheet into six equal rectangles for a total of 12 rectangles. Place 6 of the puff pastry rectangles on the prepared cookie sheet and prick them with a fork so they don’t puff up. Line them up carefully on your pan.

 Next, Add a spoonful of the blueberry mixture to the center, leaving a ½-1” border around the edges. Brush the edges with water, and place another rectangle on top to cover the blueberry mixture.

Press the edges down with the tines of a fork all the way around to seal the berry mixture inside.

Pierce the tops with some holes with your fork and brush with egg wash. Bake for 20 minutes, or until the pastries are golden brown. 

Prepare the glaze by whisking icing ingredients together in a small bowl. Add the cream a little at a time until you get your desired consistency. You want a thick, honey-like consistency.

Allow the pastries to cool before drizzling them with glaze.

FAQs about Making Toaster Strudel

  • What is strudel? According to Merriam-Webster Dictionary strudel is “a flaky pastry made from a thin sheet of dough rolled up with filling and baked”. The filling can be savory or sweet, but sweet apple strudel is probably the most famous. The word “strudel” comes from German origins and means “whirlpool”. Traditional strudel is rolled around the filling and cut which resembles a whirlpool or spiral shape. Even though the word comes from the German language, the strudel pastry was most likely invented in Austria in the 18th century. 
  • Is there a good substitute for puff pastry? There is no perfect substitute for puff pastry as it is one of the most complicated pastry doughs to make. This is why most people do not make it from scratch as it is no easy task and takes hours. It is a “laminated” dough that alternates layers of butter and dough to create that light, crispy, flaky texture that melts in your mouth. However, if you have to substitute an alternative dough you could try biscuit dough, pie crust, or crescent roll dough. Biscuit dough is probably your best bet. If you roll and fold it multiple times, it will give you a similar texture to puff pastry. Crescent roll dough may also have a similar result without additional rolling.

SUBSTITUTIONS

Blueberries: You can easily swap out the blueberries for strawberries, cherries, or mixed berries. You could experiment with other fruits such as peaches, pears, or apples, but you would need to cook these for about 10 minutes longer so that the fruit becomes tender. 

Heavy Cream – In a pinch you can use whole milk, but your glaze will not be as thick as it would be with cream.

Add nuts or shredded coconut for an added crunch and flavor. 

You can also use a jelly or jam filling for these toaster strudels. You will need about ⅔ cup of jam or jelly to fill 6 pastries. Instead of icing, you can dust the strudel with powdered sugar when cooled.

Brown Sugar and Cinnamon Version – If you prefer a toaster strudel without fruit you can make a filling of ½ cup of brown sugar and a tablespoon of cinnamon. Pecans or walnuts would also be tasty! Make a sweet cinnamon glaze by adding a teaspoon of cinnamon to the glaze instead of almond extract.

 

TIPS AND TRICKS

  • If you have any leftover toaster strudel, it is best to refrigerate it right away. Store the strudel in an airtight container or wrap each one individually in plastic wrap or foil before placing them in the refrigerator.
  • You can also freeze baked toaster strudel! After baking, do not frost your strudels. Let them cool completely and wrap each one in plastic wrap and store in a zippered freezer bag for up to 2 months. When ready to eat, remove and heat in the oven until warmed through. Frost and eat!
  • Air Fryer Version: After assembling toaster strudels, place a single layer of pastries in the air fryer basket. Cook at 350 degrees for 5 minutes. Turn over and cook for 2 more minutes. Remove strudels and let cool before icing.
