WHAT I LOVE ABOUT SALISBURY STEAK
Salisbury Steak reminds many of their childhood. My mom never made Salisbury steak from scratch when I was a kid, that I remember. She would though, once in a while, buy the Banquet Salisbury Steak for dinner.
Remember when the frozen dinners came in that foil tray? I am sure I am dating myself, but yes, back in the days before microwave ovens, they did. Mom bought the “family-sized” version, but here is one I found on google images:
I actually remember when we got our first microwave. It was huge! It had this giant door and this big Fisher-Price-looking dial for a timer.
The house I grew up in had a little kitchen, and it took up some valuable counter space, but in the new days of cable tv and microwaves, you made room. Slowly but surely, the trays were converted over to the microwaveable kind. Back in the day, we had patience, I guess. If you wanted a tv dinner you had to bake it and wait!
The first time I made this recipe was back in 2015. I had a craving for Salisbury Steak and that weekend, I made it and we had it for our weekly family Sunday dinner. I have made it countless times since then, and it’s even on the “most requested list” even for birthday dinners – which is a huge compliment!

INGREDIENTS FOR SALISBURY STEAK WITH SAVORY MUSHROOM GRAVY

For the Salisbury Steak Patties:
- Ground Beef – I recommend using lean ground beef for this recipe
- Bread crumbs – You can buy pre-seasoned or make your own.
- Ground Mustard – If you do not have ground mustard you can substitute 2 Tablespoons of Dijon mustard.
- Beef Bouillon Granules – You can substitute 2 crushed beef bouillon cubes.
- Worcestershire Sauce – I recommend not replacing the Worcestershire sauce, but soy sauce would be your best substitute.
- Ketchup – bottled works great! But have you tried making your own?
- Salt And Pepper
- Butter – You can use olive oil instead of butter to brown the patties, or a little bit of both.
For the Gravy:
- Mushrooms – You can substitute canned mushrooms in a pinch, but the fresh ones give this dish a great flavor. I prefer baby Bella mushrooms, but white button mushrooms or cremini mushrooms would be good too.
- Olive oil – I recommend EVOO, but you can also use vegetable or canola oil.
- Garlic – Fresh minced garlic is best in this recipe.
- Onion – You can use a white or yellow onion in this recipe. If dicing onions literally makes you cry, you can find pre-chopped onions in the produce section or frozen section of your grocery store. This is one of my favorite time-savers!
- Beef Broth – Another option is to use 4 cups water and 4 beef bouillon cubes dissolved. You can also use beef stock.
- Worcestershire sauce
- Ketchup
- Kitchen Bouquet – This is a browning agent and does not add much flavor to the dish, but deepens and riches the gravy nicely.
- Corn Starch – You will dissolve this in water to help thicken your gravy.
- Salt and Pepper
HOW TO MAKE SALISBURY STEAK WITH MUSHROOMS
FIRST: In a large skillet, place about 2 Tablespoons of olive oil, heat, and add mushrooms. Saute them evenly for about 5-10 minutes over medium heat.
Remove them from the pan and set aside. Discard any liquid from the pan.
SECOND: In a bowl combine ground beef with breadcrumbs, ground mustard, beef bouillon granules, Worcestershire sauce, ketchup, salt, and pepper.
Shape the meat mixture into 6 oval patties.
THIRD: Place a couple of Tablespoons of butter in your skillet and add meat patties. Brown over medium-high heat, flipping them to brown on both sides. Once they are browned evenly, remove them from the pan and set them aside.
FOURTH: In the same pan, saute the onions and garlic until they are fragrant and translucent, add olive oil to the pan if needed.
FIFTH: Add in the Worcestershire sauce, ketchup, kitchen bouquet, and broth. Add the mushrooms back in. Bring to a boil and then reduce heat to low. Add cornstarch mixture and whisk to incorporate. Gravy will begin to thicken.
SIXTH: Add meat back into the pan with the gravy mixture and simmer covered for about 30 minutes. Turn the meat every 10 minutes or so while giving the gravy a stir. Take care not to break the patties. Salt and pepper to taste.
SEVENTH: Serve over mashed potatoes.

What is Kitchen Bouquet? Kitchen Bouquet is a cooking condiment as opposed to a finishing sauce or food condiment (such as soy sauce or ketchup). It is a browning agent and seasoning sauce primarily used to add color to gravy, sauces, marinades, soups, and stews. It is manufactured by HV Food Products Company. Keep in mind that it does not add a lot of flavor to food, so if you are substituting another dark condiment such as Worcestershire sauce you might alter the flavor of the dish.

Where did Salisbury steak originate? Salisbury steak is an all-American dish that was named after its inventor, Dr. James Henry Salisbury, who was born in New York in 1823. He was an American physician and early pioneer of germ theory, particularly relating to digestive health. He advocated for dietary measures to cure disease. Due to digestive illnesses killing more soldiers during the Civil War than combat, Dr. Salisbury proposed a diet rich in beefsteak and coffee as a cure. However, Salisbury steak actually reached its popularity after Dr. Salibury’s death. His recipe is an early example of a fad diet and a staple meal served to soldiers in World War I.
What is Salisbury steak? Salisbury steak is a dish that originated in the United States. It is made from ground beef, seasonings, and other ingredients and is usually served with mushroom, onion or brown gravy. This classic comfort food is not actually steak at all. You might say it’s a cross between meatloaf and a hamburger steak. It has similar seasonings as meatloaf, but instead of one large cooked loaf, Salisbury steak is individual patties formed into the shape of steaks. It is often served over mashed potatoes.
Is Salisbury steak and hamburger steak the same thing? They are similar in that they are both formed patties from ground beef, but Salisbury steak is made with gravy or brown sauce. Hamburger steak is generally just seasoned with salt and pepper and served plain.
SUBSTITUTIONS
If you are missing a component of this recipe, you can try one of these substitutes. Just be aware that subbing other items can and most likely will alter the flavor of the recipe.
- Ground Mustard – If you do not have ground mustard you can substitute Dijon mustard. You can also use brown or yellow mustard, but Dijon will have the most similar flavor profile to ground mustard.
- Beef Bouillon Granules – You can substitute 1 crushed beef bouillon cube for every teaspoon of granules.
- Worcestershire Sauce – Dark soy sauce would be your best substitute but will alter the flavor of this recipe.
- Ketchup – Tomato paste with a bit of sugar and vinegar would give you a similar flavor to ketchup.
- Butter – You can use olive oil instead of butter to brown the patties.
- Mushrooms – You can substitute canned or dried mushrooms but the fresh ones give this dish the best flavor. If you don’t like mushrooms you may omit them. Then you will have Salisbury Steak with Onion Gravy. Still delicious!
- Olive oil – I recommend EVOO, but you can also use vegetable or canola oil.
- Fresh Garlic – Although fresh is always best, there are many substitutes for fresh garlic such as pre-minced garlic, garlic powder and garlic paste.
- Onion – You can use a white or yellow onion in this recipe. If dicing onions literally makes you cry, you can find pre-chopped onions in the produce section or frozen section of your grocery store. This is one of my favorite time-savers!
- Beef Broth – You can also dissolve bouillon cubes in water or use an equal amount of beef stock. You could also substitute half of the beef broth with red wine.
- Kitchen Bouquet – This is a browning agent and does not add much flavor to the dish. A close second to this is Maggi Liquid Seasoning. You can use Worcestershire sauce or dark soy sauce to obtain the brown color as desired, but be mindful that it may change the flavor of the dish. Another option is to reduce some beef broth with a bit of sugar. With all that being said, even if you do not add Kitchen Bouquet, you will most likely end up with the desired brown gravy due to the beef broth and Worcestershire already present in this recipe.
- Corn Starch – You could also use flour or arrowroot to make your slurry.
TIPS AND TRICKS
- This is a perfect make-ahead meal. You can fully prepare the dish and allow the Salisbury steak to cool. Place it in an airtight container and store in the fridge for 2-3 days. Simply reheat when ready to eat.
- If you have any leftovers you can place them in an airtight container and they will last in the fridge for up to 3 days. This is also a great freezer meal! To freeze: Allow to cool, then place in an airtight container such as a freezer zip-lock bag for up to 3 months. Thaw overnight in the refrigerator and reheat until warmed through.
- If your patties tend to fall apart, you can add an egg to the meat mixture to help bind the ingredients together.

Ingredients
- For the Meat:
- 1.5 pounds Lean Ground Beef
- ⅔ cup Seasoned Breadcrumbs
- 2 teaspoons Ground Mustard
- 2 teaspoons Beef Bouillon Granuals
- 4-5 dashes Worcestershire Sauce
- 1 Tablespoon Ketchup
- Salt And Pepper to taste
- butter for frying
- For the Gravy:
- 16 ounces fresh mushrooms
- olive oil
- 1 clove garlic minced
- 1 medium Onion diced
- 32 ounces Beef Broth OR 4 cups water and 4 beef bouillon cubes dissolved
- 4 dashes Worcestershire sauce
- 1 Tablespoon Ketchup
- 2 teaspoons Kitchen Bouquet
- 3 Tablespoons of Corn Starch dissolved in 3 Tablespoons water
- Salt & Pepper to taste
Instructions

- Add onions to the pan, and saute them along with the garlic until they are fragrant and translucent. Add olive oil to the pan if needed.
- Add in the Worcestershire sauce, ketchup. kitchen bouquet and broth. Add mushrooms back in. Bring to a boil and then reduce heat to low. Add cornstarch mixture and whisk incorporate. Gravy will begin to thicken.
- Add meat back into the pan, and simmer covered for about 30 minutes. turn meat every 10 minutes or so, and give the gravy a a stir. Take care as to not break the patties. Salt and Pepper to taste.
