Pink Valentine Fudge 

Today’s post is monumental for my blog. This is my 1000th post! That is hard for me to even fathom. I have been going back and forth on what to post because it’s kind of a big deal.

I decided that the fact that my 1000th post landed so close to my favorite holiday, Valentine’s Day, was kismet. So today, I am sharing with you this super pretty, super Valentine-y Pink White Chocolate Cream Cheese Fudge.

 

Nothing says “I Love You” Like Fudge

I’m really not sure why fudge got the stigma that it’s for Christmastime? I mean, I get it, I make fudge when I do my holiday baking, too. But it’s delicious chocolate candy, and why do we have to wait until December to eat it? 

I think that this pink white chocolate cream cheese fudge is perfect for Valentine’s Day, and perfect to celebrate my 1000th blog post here at An Affair from the Heart. 

 

Fun Fact About Me

Do you know how some people collect things? Like stamps, albums, or old toys, furniture, or cars? Well, I have quite an impressive collection of sprinkles. It’s really quite crazy how many I have! And yet, I can’t resist picking up another one (or ten) when I see ones that I love.

I ordered these sprinkles from Sweets & Treats a while back and I couldn’t wait to use them! Aren’t they so cute? I like to buy them, and then figure out how to use them. I am funny like that. 

 

 

Ingredients in White Chocolate Cream Cheese Fudge

Simple ingredients go into this pink fudge. All you will need are these items:

  • good quality white chocolate
  • powdered sugar
  • cream cheese
  • clear vanilla extract
  • neon pink food coloring
  • sprinkles

 

How to Make White Chocolate Cream Cheese Fudge

Begin by lining the bottom and sides of a 9×9″ baking pan with foil, leaving some overhang on the sides. Butter bottom and sides. Set aside. 

Next, In a medium bowl, beat cream cheese, sugar, and vanilla with your mixer until smooth.

Melt chocolate according to package instructions, stir until smooth. Cool slightly.

Fold melted white chocolate into cream cheese mixture. Mix in food coloring until the desired color is achieved.

 

Spread fudge into lined baking pan. Top with sprinkles, gently pressing into the fudge. 

Chill for at least an hour before removing from pan and cutting into squares. 

(Look how easy the fudge lifts from the pan using the overhang of the foil!)

 

You will want to store this fudge in the refrigerator. It also freezes really well if you want to make some and tuck it away until the week of Valentine’s Day.

Other ideas for Cream Cheese Fudge

Maybe you love this, but it’s not Valentine’s Day when you happened upon it? Maybe you don’t want it to be pink? Well, switching the color up is easy. I do find that using neon food coloring gives it a more vibrant color, so keep that in mind. Also, I like to use a clear vanilla extract when I am making brightly colored fudge – the darker kind can dull the color a tad. 

I think this pink fudge would be great in October for Breast Cancer Awareness Month – but it would also be perfect tinted orange or purple with some spooky Halloween sprinkles. I have a Grinch Fudge version of this recipe for Christmastime that is always a hit.

Replace the white chocolate with a good quality milk chocolate or dark chocolate. 

Of course, you can leave the fudge white, and it is equally gorgeous. With or without sprinkles. I love white fudge for bridal showers.
