How to Make Southwest Stuffed Peppers
Preheat the oven to 350°F and lightly coat a 10×8-inch baking dish with nonstick cooking spray.

Arrange the pepper halves cut-side up in the dish.

In a large bowl, combine the ground beef, egg, ready rice, cumin, and one-third cup of the salsa. Mix just until everything is incorporated.

Divide the beef mixture evenly among the pepper halves, gently mounding the mixture. Spoon the remaining salsa over each pepper.
Cover the baking dish tightly with aluminum foil and bake for about 50 minutes, or until the peppers are tender and the beef reaches an internal temperature of 160°F.
Remove the foil and top each pepper with a slice of pepper jack cheese. Broil for 2 to 4 minutes, just until the cheese is melted and lightly browned.
Sprinkle with fresh cilantro before serving.
Storage
Store leftover stuffed peppers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or cover with foil and warm in a 350°F oven until heated through.

Southwest Chipotle Stuffed Peppers
Ingredients
- 3 large sweet bell peppers sliced in half horizontally, with stems and seeds removed.
- 1 pound lean ground beef
- 1 egg slightly beaten
- 1 (8.5oz) package Uncle Ben's® Ready Red Beans and Rice
- 1/2 teaspoon ground cumin
- 1 cup salsa divided
- 6 slices Pepper-jack cheese
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 350 degrees.
- Spray a 10" x 8" baking dish, or deep casserole dish with cooking spray. Lay the pepper halves side by side.
- In a large bowl, combine the lean ground beef, egg, and package of Uncle Ben's® Rice, cumin, and 1/3 cup of the salsa. Mix well. Divide meat mixture evenly between the 6 peppers. Top each pepper half with the remaining salsa. Cover tightly with foil or a lid.
- Bake until the peppers are tender and the meat is cooked through, 55 to 60 minutes.) Remove foil and top each pepper with a slice of the pepper jack cheese. Turn oven to broil. Broil for 3-5 minutes or until cheese is melted and bubbly.
- Top with chopped cilantro before serving.
Notes
- Green bell peppers, red bell peppers, orange, or yellow bell peppers all work well.
- For even more Southwest flavor, add a can of diced green chiles or stir in sweet corn with the filling.
- Want to stretch the filling? Add up to ½ cup black beans along with the corn.
- If you prefer a milder spice, substitute Monterey Jack cheese for the pepper jack cheese.
