Southwest Chipotle Stuffed Peppers

These Southwest Stuffed Peppers are filled with ground beef, smoky red beans and rice, salsa, cumin, and pepper jack cheese for an easy family dinner.

Ingredients

  • 3 large sweet bell peppers sliced in half horizontally, with stems and seeds removed.
  • 1 pound lean ground beef
  • 1 egg slightly beaten
  • 1 (8.5oz) package Uncle Ben's® Ready Red Beans and Rice
  • 1/2 teaspoon ground cumin
  • 1 cup salsa divided
  • 6 slices Pepper-jack cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  • Preheat oven to 350 degrees.
  • Spray a 10" x 8" baking dish, or deep casserole dish with cooking spray. Lay the pepper halves side by side.
  • In a large bowl, combine the lean ground beef, egg, and package of Uncle Ben's® Rice, cumin, and 1/3 cup of the salsa. Mix well. Divide meat mixture evenly between the 6 peppers. Top each pepper half with the remaining salsa. Cover tightly with foil or a lid.
  • Bake until the peppers are tender and the meat is cooked through, 55 to 60 minutes.) Remove foil and top each pepper with a slice of the pepper jack cheese. Turn oven to broil. Broil for 3-5 minutes or until cheese is melted and bubbly.
  • Top with chopped cilantro before serving.

Notes

Store leftover stuffed peppers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or cover with foil and warm in a 350°F oven until heated through.
These peppers also freeze well. Wrap individually and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Green bell peppers, red bell peppers, orange, or yellow bell peppers all work well.
  • For even more Southwest flavor, add a can of diced green chiles or stir in sweet corn with the filling.
  • Want to stretch the filling? Add up to ½ cup black beans along with the corn.
  • If you prefer a milder spice, substitute Monterey Jack cheese for the pepper jack cheese.
