WHAT IS THE DIFFERENCE BETWEEN COUNTRY GRAVY AND WHITE GRAVY?

This depends on where you live. Country gravy and white gravy can mean the same thing. But for some, “country gravy” means the roux uses bacon or sausage grease as well as butter. So, what country style is made of all depends on where you grew up and who was doing the cooking!

I use my recipe for White Country Gravy as the base for this Sausage Gravy recipe.

I know the many different types of gravy can get a bit confusing. Country gravy, also known as white gravy and sawmill gravy is used in Southern cooking and has butter in it which is used to enhance the flavor. Sausage gravy mostly uses the fat from the cooked sausage to add flavor.

  • Pork sausage – Ground pork sausage gives this gravy its meaty flavor.
  • Butter – Salted or unsalted butter adds a creaminess to the gravy.
  • All-purpose flour – White all-purpose flour helps thicken the gravy. For gluten-free gravy use gluten-free flour. 
  • Whole milk – Whole milk gives the gravy its smooth texture. You can use low-fat or skim milk but your gravy won’t be as rich. 
  • Salt and black pepper – Add salt and pepper to taste.

How to make sausage gravy

This recipe is quick and easy to prepare with just a few simple ingredients. 

First: In a large skillet over medium-high heat brown the sausage until no longer pink but golden brown. 

Second: Add the butter to the skillet and stir until melted.

Third: Sprinkle flour over the sausage and stir for a couple of minutes as the flour is completely soaked in. 

Fourth: Whisk the milk into the sausage mixture until smooth.

Fifth: Stir in the salt and pepper adjusting to your taste.

Serve hot over homemade biscuits.

Leftover homemade sausage gravy will keep in an airtight container in the fridge for up to 4 days. Allow gravy to come to room temperature before placing it in the fridge. You can freeze gravy for up to 4 months. Thaw in the fridge overnight and then use how you wish.
