This easy, no-bake dessert layers rich coffee ice cream with chocolate frosted donuts for a fun twist on your favorite coffee shop combo. My Coffee & Donuts Ice Cream Cake is built in a loaf pan and frozen overnight; it slices beautifully into cool, creamy layers with donut pieces in every bite. Whether you dress it up with whipped cream and chocolate drizzle or serve it as-is, this cake is a guaranteed crowd-pleaser.

What goes better with a donut than coffee? I would have to say nothing. Everyone has a favorite donut, am I right? What’s yours? Mine is by FAR double chocolate.
This post was originally written in 2016 in partnership with Dunkin’ Donuts. I loved those old Dunkin commercials, didn’t you? “Gotta Make the Donuts.” My hubs still says this when he’s off to work sometimes.
Coffee & Donuts Ice Cream Cake
There’s something undeniably fun about turning a box of donuts and a carton of ice cream into a show-stopping dessert, and that’s exactly what this Coffee & Donuts Ice Cream Cake does. It’s built like an old-fashioned icebox cake, with layers of soft, chocolate-frosted cake donut pieces and rich coffee ice cream stacked in a loaf pan and frozen until sliceable. It’s simple, nostalgic, and such a clever way to serve a crowd without ever turning on the oven.
This combo is especially perfect if, like me, you’ve got a soft spot for Dunkin’. Their Double Chocolate Donuts are the ultimate shortcut here, dense, fudgy, and just the right amount of sweet. Paired with coffee ice cream, it feels like a frozen spin on your morning coffee run. You can stick with the original flavors or play around with your favorite donut and ice cream pairings. Either way, this one’s guaranteed to be a conversation starter.
Ingredients in Coffee & Donuts Ice Cream Cake
Guess what? This ice cream cake has only two ingredients! Frosted Chocolate Cake Donuts and coffee ice cream! It doesn’t get much easier than this!
How to Make Coffee & Donuts Ice Cream Cake
You need six regular-sized chocolate frosted chocolate cake donuts and 1.5 quarts of coffee ice cream.
Cut each donut horizontally into three pieces. Line a loaf pan with plastic wrap and cover the bottom with donuts, breaking them into pieces to make them cover the bottom.
Top with a layer of ice cream, then a layer of donuts, then ice cream, donuts, then ice cream. You will have three of each layer when you are done. Wrap in plastic wrap and freeze for at least 24 hours.
Unwrap, remove from pan, plate, and slice.
Serve with whipped cream and chocolate if you want to make it a fancier presentation, but it’s not necessary.
Store Leftover Ice Cream Cake wrapped in plastic wrap and inside an airtight container in the freezer for up to 3 months.

Tips & Substitutions
It’s always fun to make recipes your own! Here are some substitution ideas and tips for making this ice cream cake easily.
Other Flavor Ideas:
- Vanilla ice cream + glazed donuts for a classic twist.
- Strawberry ice cream + powdered sugar donuts for a summery, shortcake-inspired treat.
- Butter Pecan or Maple ice cream + apple cider donuts for cozy fall vibes.
- Chocolate Malt ice cream + strawberry donuts for a chocolate-covered strawberry crowd-pleaser.
- Optional toppings: A drizzle of chocolate or caramel sauce, a dollop of whipped cream, or even a few sprinkles can dress it up, but it’s just as fun served straight from the freezer.
Tips and Tricks for Making Ice Cream Cakes:
- Use any chocolate cake donut you like. If you can’t find Dunkin’s Double Chocolate Donuts, any sturdy, cake-style chocolate donut will do. Frosted or unfrosted.
- Let the ice cream soften for about 10–15 minutes before assembling to make layering easier.
- Line your loaf pan well with plastic wrap, leaving overhang to wrap the top once assembled. This makes it easy to lift out the finished cake cleanly.
- Make it ahead! Like any good icebox cake, this needs at least 24 hours in the freezer so the layers can firm up and slice beautifully.

What a fun way to use up some donuts. I am not really a donut fan, expect for Apple Cider donuts. But I would gladly eat this cake.
That would be a great combination with some cinnamon ice cream! 😉
