Caramel Churro Chex Mix Recipe

Cinnamon and sugar lightly salted Caramel Churro Chex Mix is the sweet party mix you won’t be able to leave alone.  This simple to make recipe is light and crispy and oh so delicious!

About a year or so ago, my friend Gail gave me the recipe for this Caramel Churro Chex Mix.  The recipe card has been tucked in my folder of “recipes to make” ever since.  I have thought about it so many times, but for one reason or another I put off making it.  

Take my advice.  DON’T put off making this!  This sweet Chex mix is one of my favorites I have ever made.  And if you have been here long, you will know just how many delicious snack mix recipes that I have, and that is saying A LOT.  

 

Crispix Cereal vs. Chex Cereal

Even though its name “Chex Mix” it actually uses Crispix cereal, so technically it should be a “Crispix Mix.” 

I have another snack mix recipe that uses Crispix cereal that I named Candy Coated Crispix Mix, which has a caramel coating with peanuts and M & M’s. I actually like using Crispix cereal in party mix recipes. It’s a little larger in size than Chex and has very much the same flavor.  

Chex cereal has that square shape and is available in all sorts of flavors.  Crispix is hexagon shaped, with a little more of an airy center. One side is rice and the other is corn.

I will admit, sometimes I have a hard time finding Crispix.  If that is the same case for you, then just use half corn and half rice Chex and you’ll get the same outcome for this Churro mix.  

When it comes right down to it – Crispix was actually invented to compete with Chex, so they are fairly interchangeable.  

 

 

 

How to Make Caramel Churro Chex Mix

There is really not much to making this, another reason that I am so ashamed that you are just seeing this recipe now.  My intention was to share it with you for Cinco de Mayo.  It would be a great Cinco de Mayo party food recipe, wouldn’t it? But alas I am a slacker.  How do you say procrastinator in Spanish?  That’s me.  

 

Begin by mixing cinnamon and sugar together in a bowl.  In a saucepan melt butter with brown sugar and corn syrup.  When it’s melted, you’ll remove it from the heat and stir in the baking soda.  Adding that makes the caramel crunchy candy coating on the outside of the cereal. Without it, it’ll be really sticky.  

Pour the caramel mixture over the cereal and stir to coat it.  Spread on a baking sheet and sprinkle with the cinnamon sugar mixture.  Bake and let cool before serving or storing in an airtight container.

This cinnamon chex mix makes excellent gifts at the holidays, also teacher and hostess gifts year round.  Just package it in a cute little jar with a tag and a ribbon.

Caramel Churro Chex Mix Recipe

Ingredients

  • 9 cups Crispix Cereal
  • 1 cup brown sugar
  • 1 stick salted butter
  • 1/4 cup corn syrup
  • 1/4 teaspoon baking soda
  • 2/3 cup sugar
  • 2 teaspoons cinnamon

Instructions

  • Preheat oven to 350 degrees. Line a large baking sheet with foil, and spray it with non-stick cooking spray.
  • In a small bowl combine cinnamon and sugar. Set aside.
  • Pour cereal into a large bowl.
  • In a saucepan over medium heat melt together butter, brown sugar and corn syrup until mixture comes to a boil. Boil for one minute stirring constantly. Remove from heat and stir in baking soda. The mixture will foam up.
  • Pour mixture over cereal and carefully stir until cereal is well coated.
  • Spread the coated cereal evenly on the baking sheet. Sprinkle with cinnamon sugar mixture, flipping it over halfway through the mixture, to coat the other side.
  • Bake for 5 minutes, flip the mixture over and bake for 3 minutes more. The cereal will be a golden brown.
  • Remove from oven, cool completely and store in an airtight container.
