Corn Casserole with Cowboy Caviar

This dish works with almost anything you’re serving. It’s perfect next to grilled chicken, smoky brisket, burgers, pork chops, or even a cozy Sunday roast. It fits right in at potlucks and holidays, too, with turkey or ham. There is rarely a spoonful left at the end of the meal.

Leftovers reheat beautifully in the microwave or oven, and their flavors only get better the next day. Store any extras covered in the fridge, and you’re set for a great lunch tomorrow.

Paisley Farm Cowboy Caviar

Add bold, zesty flavor to any meal with Paisley Farm Cowboy Caviar. Each jar is packed with a colorful, hearty mix of black beans, pinto beans, corn, red bell peppers, and spices, fresh, flavorful, and ready to serve. Perfect as a dip, tossed in salads, on tacos, or mixed into casseroles like this Cowboy Corn Casserole, it brings a vibrant, farm-fresh taste with none of the artificial preservatives. Convenient, versatile, and full of wholesome ingredients, Paisley Farm Cowboy Caviar makes it easy to elevate everyday meals with a pop of flavor.

Adding Paisley Farm Cowboy Caviar to corn casserole is such an easy way to make the dish even better. It brings instant flavor without any chopping, plus the mix of beans, peppers, and corn adds great texture to balance the creamy base. I also love how it brightens the casserole with little pops of color, making it look extra inviting on the table.

The beans give it a bit more substance (and even a little extra fiber), so it feels heartier and more satisfying. And maybe the best part? It stretches the casserole just a bit further, perfect when you’re feeding a crowd or hoping for leftovers.
