How to Make Easy Lemon Truffles

Use an electric hand mixer to combine the cake and frosting in a large mixing bowl.

Using the whisk attachment, mix the ingredients for about a minute until the ingredients are moistened.

Use a cookie scoop or a measuring spoon to divide the dough into 2 Tablespoon portions. Use your hands to roll the cake mixture into balls and place them on a large baking sheet. They make fairly big truffles, if you prefer to make smaller balls, go for it!

Freeze your cake balls for an hour. Make sure the cake balls are firm to the touch.

Combine the chocolate and lemon zest in a microwave-safe bowl. Melt your white chocolate chips for one minute at 50% power. Give the chocolate a stir and continue heating for 30 seconds at a time at full power until the chocolate is completely melted. Do not let the chocolate burn!

Dip your cake balls in the melted white chocolate using a fork and then return them to the tray. Freeze your truffles for an additional 30 minutes.
