Ingredients
4cupslemon cakeprepared and crumbled15
1 ½cupslemon frosting
3cupswhite chocolate chips
1Tablespoonfresh lemon zest
Instructions
Use an electric hand mixer with a whisk attachment to combine the cake and frosting in a large mixing bowl, mixing the ingredients together for about a minute.
Use your hands to roll the cake mixture into balls about 2 Tablespoons in size and place them on a large baking sheet.
Freeze your cake balls for an hour. Make sure the cake balls are firm to the touch.
Combine the chocolate and lemon zest in a microwave safe bowl. Melt your white chocolate chips in a microwave safe bowl for 1 minute at 50% power. Give the chocolate a stir and continue heating for 30 seconds at a time at full power until the chocolate is completely melted.
Dip your cake balls in the chocolate using a fork and then return them to the tray. Freeze your truffles for an additional 30 minutes.

You can store your truffles in the fridge in an airtight container for up to a week or in the freezer for up to two months. They are great frozen or from the fridge!One box of cake mix is enough for this recipe.
