Watermelon Sorbet

My twins love to be in the kitchen!! I love that they have the desire to learn to cook and to bake.
This summer I let them both get a Pinterest of their own, and they have been pinning TONS of recipes to try out. They have made root beer float popsicles, homemade frosty’s, all sorts of smoothies and home made ice creams. I am seeing a theme here.
My grocery list has additions weekly, and last week, I got asked every day, “can we get Watermelon today?”
So, we did and Hayden, whipped up this sorbet in just minutes.
Waiting for it to freeze was the worst part!

Watermelon Sorbet
Ingredients
- 1/2 cup sugar
- 1/2 cup water
- 4 cups seedless watermelon cut in small chunks
- 1 Tablespoon Lemon Juice
Instructions
- Combine water and sugar in a saucepan on the stove, stirring until sugar is dissolved. (you have just made simple syrup) Set aside to cool.
- In your blender or food processor, puree melon. Depending on the size of machine you are using you may need to do this twice.
- Add sugar and lemon to pureed watermelon. Stir to combine.
- Pour into an 8x8 baking dish, cover and place in the freezer to freeze.
- Either scoop into a dish (like we did) or puree again for a finer consistency.
