Ever since my oldest son was old enough to choose his own birthday cake, it’s always been an ice cream cake of some sort.  The flavors change throughout the years, but one thing remains the same – his love of homemade ice cream cakes. This is the one I made him this year for his 25th birthday, Chocolate Chip Cookie Dough Ice Cream Cake.

 

I made this particular Chocolate Chip Cookie Dough Ice Cream Cake with a chocolate chip cookie crust, similar to how you prepare a graham cracker crust.  It’s then layered in a springform pan with chocolate chip cookie dough ice cream and hot fudge.  Topped with more hot fudge and chocolate chip cookies.

Of course, this isn’t the first time I made this sort of cake, though.  Back in 2013 when Spencer turned 19, I made something similar.  That ice cream cake had an actual chocolate chip cookie bottom.  
 
 
 
Here he is on his 19th birthday.  
 
 
And this year on his 25th.
 
 
It seems like time ticks away, and all of those moments I asked myself “how did that happen already?” are strung together, and before I knew it he’s a man right before my eyes.
 
 
 
 

Beautiful Memories

What I wouldn’t do to go back to the days when I would get up to feed him in the middle of the night, turn on “Nick at Nite,” tune in to all of my old favorite shows like Laverne & Shirley, Happy Days, Mary Tyler Moore and Taxi.  We’d snuggle into the rocker with the light of the TV…and many nights I couldn’t bear to put him back bed.
 
His bottle would be long gone, he would be sound asleep and I would just watch the tv, cuddled up, and rocking back and forth.
Some nights, I would no more than put him back in his crib and an hour later it’d be time for the next feeding.
 
 
 
He was my first, and I was lucky to be able to nap when he did, or I am not sure how I would have made it?  I was young, in fact, I was his age, 25, when I had him. 
 
Now he’s grown up, and has already graduated college, has a great job and lives in an apartment with his girlfriend, thankfully only minutes away.  He always said he wouldn’t live here after school, and then he met Mae, and that changed.  She is from Chicago and planned to settle in Nebraska, where she, too, went to school.  
 
After they both graduated from UNL, they took jobs in Omaha and moved just a couple of miles away.  I am so thankful for that.

What do I need to make a Chocolate Chip Cookie Dough Ice Cream Cake?

  • chocolate chip cookie dough ice cream
  • hot fudge
  • chocolate chip cookies and butter OR
  • refrigerated chocolate chip cookie dough
  • a springform pan
  • a mini food chopper
 
So, as I said, I have made this cookie dough ice cream cake a couple of different ways.  There are two things that are different. 
The topping: One uses cookies and chocolate chips, the other chocolate chip cookie crumbs. 
The crust: One has a giant chocolate chip cookie for the bottom, the other a crust made the same way you’d make a graham cracker crust, with chocolate chip cookie crumbs and butter.

Both of them are delicious.  The bottom one is slightly easier to cut, as the top one has that thicker cookie crust, and you have to keep in mind, it’s frozen.  
 
 
When I made this cake the first time, I covered the top in chocolate chips.  This time I swirled hot fudge on the top and covered it in cookie crumbs.
 
While the ice cream was soft, I pushed cookies in to decorate it. I think, either way, you need to try this cake, don’t you?

Chocolate Chip Cookie Dough Ice Cream Cake

Ingredients

  • 46 chocolate chip cookies (I used Chips Ahoy) divided
  • 1 Tablespoon butter melted
  • 1 12 ounce jar hot fudge
  • 1 quart Chocolate Chip Cookie Dough Ice cream softened

Instructions

  • In your food processor, pulse 40 cookies, reserving 6 to decorate the top. (there will still be fairly decent sized chocolate chips, you don't want dust, just cookie crumbles)
  • Remove half of the cookie crumbles, set aside. To the remaining half, add melted butter and pulse to combine.
  • Press into the bottom of a 9" springform pan with the back of a fork.
  • Heat jar of hot fudge in microwave according to jar directions.
  • Drizzle 1/3 of the hot fudge over the cookie crust.
  • Top fudge with half of the softened ice cream, spread evenly. Drizzle 1/3 more of the hot fudge sauce over the ice cream, top with half of remaining cookie crumbs. Add the remainder of the ice cream, spread into pan.
  • Swirl the remaining hot fudge on top of ice cream, top with remaining cookie crumbs. Decorate with half pieces of cookies, if desired, by pressing them into the soft ice cream.
  • Cover with foil and freeze for 24 hours before serving.

Notes

To prepare this ice cream cake with a cookie bottom: You will need 1 (8 ounce tube) of refrigerated cookie dough and 2/3 cup chocolate chips.
Preheat oven to 350 degrees F. Line the bottom of a 9″ springform pan with parchment paper. Press 2/3 of the cookie dough into the bottom of pan and bake about 20-23 minutes, or until cookie is done. Take the rest of the cookie dough and bake into 6 cookies. Heat jar of hot fudge in microwave according to jar directions. Pour over the warm cookie, reserving about 1/4 cup. Top fudge with softened ice cream, spread evenly. Swirl the remaining hot fudge on top of ice cream. Top with chocolate chips. Break cookies in half, and press cookies into the top to decorate. Cover with foil and freeze for 24 hours before serving.
Baking times vary for each crust. Plan to freeze for at least 24 hours. Serves 12 to 16 people depending on the size of the slices.

    1. I know it would! When I started making ice cream cakes “back in the day” I always did them in 9×13. (I didn’t even own a springform pan!) It works perfectly!

    2. Thank you! Any tips on using the 9×13 pan or on serving it from that pan? I’ve never made one of these before but this looks too delicious not to try!

    3. Just bake the cookie in the bottom like you’re making cookie bars, spread the hot fudge then the ice cream while still slightly warm. — top with fudge or whatever you decide on top and freeze. Maybe crumble the cookies on top? Cut into squares to serve like you would a 9×13 cake. 🙂

    1. That’s terrible!! where are you living? You could make chocolate chip cookie dough for the bottom and add some to vanilla ice cream for the middle? Top with hot fudge.
