Preheat the oven to 375ºF and spray a large baking sheet with non-stick cooking spray or parchment paper.

Combine the garlic powder, thyme, Italian seasoning, salt, and paprika in a small bowl and set aside.

Place potato wedges in a large mixing bowl and coat with olive oil. Add the parmesan and mix until fully coated. Add the seasoning mixture and mix until fully coated.

Spread the potato wedges on the prepared baking sheet in a single layer.
