Roasted Parmesan Potato Wedges

Ingredients

  • 4 large potatoes cut into wedges
  • 1/4 cup olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 2 teaspoons Italian seasoning
  • 1 teaspoons salt
  • 1/2 teaspoons paprika
  • 1/2 cup parmesan cheese shredded
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 375ºF and spray a large baking sheet with non-stick cooking spray.
  • Combine the garlic powder, thyme, Italian seasoning, salt and paprika in a small bowl and set aside.
  • Place the potatoes in a large mixing bowl and coat with olive oil.
  • Add the parmesan and mix until fully coated.
  • Add the seasoning mixture and mix until fully coated.
  • Spread the potato wedges on a large sheet pan to create an even layer and bake for 25-35 minutes or until golden and crispy.
  • Serve with freshly chopped parsley and your favorite dipping sauce.

Notes

Leftovers of these crispy roasted potato wedges will keep for 3-4 days in an airtight container in the fridge. You can freeze leftovers for up to 3 months. Thaw in the fridge overnight and reheat in the oven to crisp up again.
