Preheat the oven to 375ºF and spray a large baking sheet with non-stick cooking spray.
Combine the garlic powder, thyme, Italian seasoning, salt and paprika in a small bowl and set aside.
Place the potatoes in a large mixing bowl and coat with olive oil.
Add the parmesan and mix until fully coated.
Add the seasoning mixture and mix until fully coated.
Spread the potato wedges on a large sheet pan to create an even layer and bake for 25-35 minutes or until golden and crispy.
Serve with freshly chopped parsley and your favorite dipping sauce.

Leftovers of these crispy roasted potato wedges will keep for 3-4 days in an airtight container in the fridge. You can freeze leftovers for up to 3 months. Thaw in the fridge overnight and reheat in the oven to crisp up again.
